Cocktail Meatballs

Reviewed: Dec. 23, 2002
I cheated and used frozen meatballs and baked for 15 minutes while making the sauce in a sauce pan. The sauce comes out to be absolutely amazing that you wouldn't know if the meatballs where homemade or store bought. I added 1 tbsp. of worchestershire sauce and put the sauce and meatballs in a crockpot and put on low for a couple hours. It was a huge hit at the my friend's Xmas party. People where raving and asking for this recipe all night. They were the first things to be eaten up on the buffet table.

Stuffed Crown Roast of Pork

Reviewed: Dec. 27, 2004
I suggest 375 degrees for 2 1/2 hrs or until thermometer reads 155 -160 degress. Cover (tent) with foil and wait about 20 minutes to cut. Don't wait until it read 175 degrees or your meat will most likely be dry. Will meat is resting it still cooks.

Good Ol' Alabama Sweet Tea

Reviewed: Mar. 28, 2006
Would be 5 stars if the recipe toned down the sugar a bit. I used 1-1/2 cups and even think I can get away with making it with 1-1/4 cups. 2 cups to me would be way too sweet. I didn't have family size tea bags and used 4 regular size. UPDATE- My Bf is in love with this tea he said its the best.

Rubbed and Grilled Pork Loin

Reviewed: May 6, 2006
Come on people try this one! Five star hit. I made this for a bunch of people and it was gone in no time. I only got a little piece myself. I let the rub marinade a couple hours in a zip loc and put on the grill for about 2 hrs on low after searing it first. Let rest for 25 minutes and you won't have any complaints. Thanks for this recipe pork board.

Southwestern Turkey Soup

Reviewed: Jun. 10, 2006
I modified a bit because I like more depth in my soup and used chicken instead of turkey (what I had available). I sauteed the onion and garlic in the oil first before adding stewed tomatoes along with the fresh romas. I also added corn and black beans. I must say I enjoyed adding the lime it brightened up the soup but I disliked the chopped avocado, I love avocadoes but the flavors of the soup made them taste a little strange. I prefer topping the soup with Guacamole instead.

Basil Pesto Bread

Reviewed: May 15, 2006
Yummy, I used a baguette. I would have given it 5 stars if you instructed to lightly toast the bread first. (The pesto/tomatoes make it soggy. Pesto was fantastic, I used basil and parsley mixed and added a little salt and pepper. I have plenty pesto left over for tomorrows dinner which I will toss with pasta and shrimp alfredo. FYI - pine nuts are also called pignoli nuts and you can find them near your olives, pickles etc. or in your pasta sauce section in your supermarket. I toasted in small non skillet by itself for a minute or two.

I omitted the green chilis (jalapeno is good enough) and omitted the olives (my family doesn't like them) My grill had no probane so I did this in my oven, unwrapped the foil last cple minutes under the broiler to get a little crispier. Delicious, will make often.

Maine Lobster Lasagna

Delicious - I made the alfredo sauce using the one from this site. "Quick and Easy Alfredo Sauce". This is time consuming and cost about $20 to make but well worth it. (I live in New England so lobster was only $5.99/lb - I bought (2) 1lb lobsters.

Chicken Tetrazzini for a Crowd

Awesome. I boiled chicken breast in chicken stock while preparing the pasta. I modified a little - I sauteed the mushrooms with chopped onions and a little minced garlic until carmelized. This dish is very good even the next day. Great crowd pleaser.
