Anniversary Chicken I

I had with white rice and asparagus for a quick dinner night. Easy and good. Instead of bacon bits, I tore in bigger pieces.

Moroccan Lentil Soup

Philly Cheesesteak Sandwich with Garlic Mayo

I used american cheese instead of mozzerella and used a little of red, yellow and green bell peppers for color. I will make again but may skip the garlic mayo, although it was good I prefer not to have.

Champagne Shrimp and Pasta

Excellent even the next day. The champagne is so good in a sauce I will use more often in cooking. I had to modify to what I had in my pantry - I used a can of stewed tomatoes and canned mushrooms. Instead of heavy cream I used 1/2 and 1/2 and instead of a shallot I used a small onion. I added a little bit of chopped fresh basil to the sauce at the end. The flavor was sweet and delicious.

Good Ol' Alabama Sweet Tea

Would be 5 stars if the recipe toned down the sugar a bit. I used 1-1/2 cups and even think I can get away with making it with 1-1/4 cups. 2 cups to me would be way too sweet. I didn't have family size tea bags and used 4 regular size. UPDATE- My Bf is in love with this tea he said its the best.

Asian Beef with Snow Peas

Taste pretty good I put on top of white rice. I added just a little more cornstarch to the sauce for a thicker sauce.

Tilapia with White Wine Caper Sauce

I used swordfish and added mushrooms and the garlic before adding the wine to reduce. I squeezed a little lemon in the sauce the end. This dish was good.

Potato Leek Soup III

I added celery and used half and half, the starch from the potatoes will naturally thicken this soup so heavy cream is not necessary.

Corned Beef and Cabbage I

I like to add cabbage in at the same time as the other veggies. I like to put a lot of black pepper and butter on the veggies when eating and drizzle white vinegar on top. Sooo good.

The Best Clam Sauce

Just ok, definitely not the best. I doctored it up to my taste. I like more clam juice DO NOT strain any fabulous clam liquor, I like chopped clams verses minced in my clam sauce. I suggest cutting back on the butter and add more wine, red pepper flakes and parsley + top w/Parmesan.

Roasted Brussels Sprouts

I did a quick sautee in a skillet first then put in the oven. I can't believe how much I liked this. I normally dislike brussels sprouts and I found myself eating a lot of this. Thanx.
