Chicken and Shrimp Jambalaya

I scaled in half, used chorizo sausage, used chicken stock instead of water, added saffron shreds., left out the ham, used frozen cooked shrimp, added a little bit of minced habanaro instead of the hot sauce and jalapeno. Very good.

Mexican Casserole

I modified by adding cumin and coriander and a little salsa, I used diced tomatoes with mild green chilis, used a mixuture of tostitoes and doritoes instead of tortilla. I used montery and mexcian cheese mixed. I used black beans because I have no clue what ranch beans. I piled this on some lettuce and served w/ fresh chopped tomatoes and red pepper + some sour cream.

Chicken Breasts in Caper Cream Sauce

I liked this recipe but the rest of the family did not so much. Needless to say one of them is not a lemon fan. I think the lemon pepper is strong. I may shave a little fresh zest instead next time or squeeze a couple drops of lemon instead.

Golden Sweet Cornbread

The only negative about this bread is that it falls apart very easily. I may increase to 2 eggs and or/a little more vegetable oil. I also put in 3/4 of c. of sugar instead of 2/3 c. in error but it tasted great and will leave use 3/4 c. next time too. A+ for flavor.

Quick and Easy Alfredo Sauce

Exactly what the recipe says. Flavor was good. Next time I may add fresh garlic. I mixed in with a pesto sauce with shrimp and fetticini. YUM.

Basil Pesto Bread

Yummy, I used a baguette. I would have given it 5 stars if you instructed to lightly toast the bread first. (The pesto/tomatoes make it soggy. Pesto was fantastic, I used basil and parsley mixed and added a little salt and pepper. I have plenty pesto left over for tomorrows dinner which I will toss with pasta and shrimp alfredo. FYI - pine nuts are also called pignoli nuts and you can find them near your olives, pickles etc. or in your pasta sauce section in your supermarket. I toasted in small non skillet by itself for a minute or two.

Oven Fried Chicken III

I mixed in instant potato flakes and crushed saltines to the bread crumb mixture (I used seasoned bread crumbs)I also added some extra seasonings. I added a little champagne vinegar to the mayo. Bake time was perfect at 45 minutes.

Creamy Au Gratin Potatoes

Very good. I used 1 cup shredded cheddar and 1/2 c. velveeta. I really like a lot of pepper in this. I think I will fry some onions and mix in at the end. Either way it would be good.

Spaghetti Salad I

I enjoy making and eating spaghetti salads. I just break the spaghetti in half and cook not in small pieces. I like to use Red Wine Vinegar Salad dressing mixed with a Zesty Italian. I added chopped basil and parsley and omitted the sesame seed because I didn't have any left.

Stuffed Jalapenos III

Excellent. I added shredded montery and cheddar cheese to the cream cheese along with a little minced jalapeno and a little taco seasoning. Bake time took about 30 - 35 minutes.

Zucchini Boats on the Grill

I omitted the green chilis (jalapeno is good enough) and omitted the olives (my family doesn't like them) My grill had no probane so I did this in my oven, unwrapped the foil last cple minutes under the broiler to get a little crispier. Delicious, will make often.
