Taco Casserole

This is okay at best. It is pretty much Hamburger Helper without the box. I made no variations to the recipe at all and if I ever decided to try to make it again, it would need a serious flavor overhaul. I would suggest a can of Rotel or salsa instead of the plain diced tomatoes. And maybe plain tomato sauce instead of the tomato soup. (The soup makes it a little sweet for my taste.) And I would also recommend either adding more cheese to the top or to cover with aluminum foil before baking. The cheese melted to the tortilla chips creating a crunchy shell on the top that did not mix into the rest of the casserole. The plus side, though, was that my kids seemed to enjoy it. Despite that fact, this won't be in our regular meal rotation again any time soon.

Vegetarian Baked Pasta

This was good, but apparently we don't like gorgonzola. It overpowered the dish to the point of not being able to eat it. If you use it, go easy. Otherwise, eliminating it entirely makes for an enjoyable meal!

Vegetarian Bean Curry

I love that I didn't have to change a thing about this recipe! (I did sub pinto beans for the garbanzos, but that was just a preference thing.) It was wonderful and simple and simply wonderful! :) Even my picky kids loved it! This was our first venture in vegetarian cuisine and it was the perfect start! Thank you so much for sharing.

Caramel Marshmallow Buttons

Addictive Pumpkin Muffins

I am giving these 4 stars because my kids liked them but my own rating would be a 3. I followed the recipe EXACTLY and thought these were ok at best. I used the largest muffin pan that I have (which must be smaller than the recipe intended) and ended up with 54 muffins. I used liners on the first batch. Don't! The muffins are so sticky that the liner just sticks to them and you end up with only the tops being edible. For the remaining batches, I skipped the liners and greased the pans like the recipe calls for and ended up with better results. However, I am NOT a fan of the texture of these. They are super chewy. They were still somewhat moist, but just don't have that soft, almost crumbly texture that you expect a muffin to have. If I was going to make these again, it would only be at the request of the kids because these are not for me.

Ground Turkey Casserole

I did not care for the hot sour cream/cream cheese combo in this recipe. I followed it exactly and ended up with an entire meal that had to be thrown away. No one would eat it. (nor would I make them.) Sorry, i hate to leave bad reviews, but will not even attempt to do this one again.

Cheesy Chicken and Rice Casserole

My husband and I both loved this. I used one can of cream of mushroom soup and one cream of chicken. I also sauteed the chicken with a little garlic powder for some extra flavor.

Best Ever Saucy Beef Kabobs
