This beef stew was made for “Irish night” that my cooking club had on March 18, 2011. The women cooked the food and the husbands and children came together at the end of the day to enjoy the new irish foods that we discovered on allrecipes.com. This recipe was moderate in preparation although created much needed down time while it cooked in the crock pot. I decreased the amount of carrots, increased the meat and potatoes and omitted the beer. I did add a cup of water with brandy extract to it. Everyone loved the stew and I had virtually no stew left at the end of the evening.
