Wild Rice Salad

Really great recipe! I used canned chicken because I was in a hurry and didn't have any straight wild rice, so I used a wild rice blend. But otherwise I followed the recipe. I wasn't sure about adding green onions, but they turned out to be important - don't skip them! Also, the grapes add some moisture and sweetness. In my opinion, I don't think cherries would work as well. The salad was still tasty the next day, but the dressing had been absorbed by the rice so it was a little dry, but still good. Thanks for sharing!

Chicken With Mushrooms

We love this recipe -- it's become one of our go-to favorites. We make it exactly as the recipe calls for, except that our family really loves mushrooms, so we throw in a lot more. Really tasty!

California Chicken

We really liked this recipe. I only gave it 4 stars because I feel the marinade that other reviewers have recommended is really important -- it gives the chicken itself some flavor, rather than just relying on the toppings. I made a mistake by serving this chicken with another recipe from this site that we love, Quinoa and Black Beans. I thought the flavors would complement one another, but as it turned out, the quinoa's flavor (has a good dose of cumin and cayenne) was too strong for the milder chicken. Next time, I'd serve it with fresh sweet corn and maybe a cucumber salad.

Broccoli Cheese Soup

4.5 stars -- a really great soup, once you double the broccoli (or even triple, if you really like broccoli) and nearly double the cheese. As other reviewers suggested, using fresh broccoli also makes a huge difference in texture, flavor and color.

Quinoa and Black Beans

Made recipe as is except I substituted 3/4 tsp. chili powder for the cayenne and added a little extra garlic since we're garlic-lovin' folk. Really delicious! Great as a side dish, or my hubby and I both like taking this as a lunch. Thanks for sharing!

Famous Queso Dip

Really yummy! We had a smaller crowd than expected, though, and so I had some leftovers. Rather than let it go to waste, I decided to try making a cheese soup with it, and it worked great! I had used the mild Rotel tomatoes, and that was plenty spicy for me since I also also browned up and added some spicy sausage to the dip. To make the soup, I sauteed some onion, added the leftover cheese dip and a can of evaporated milk. Once it started bubbling, I threw in some frozen mixed veggies, and thought it still needed a little thinning so added some chicken broth. Delish!

Caprese Chicken

5 stars for great flavor and being a quick and easy recipe that tastes like it took a lot more effort! Made the recipe exactly as indicated, except that my husband and I love the rich flavor of goat cheese, so we added a little to our pieces and left the kids' with just the mozzarella. Fantastic! The only change I'll make next time around is to pound the chicken breasts before marinating -- not to tenderize, because the marinade already does a great job of that, but because I want more surface area for the marinade to soak into. This is one I'll definitely keep on hand for when company's coming, but I don't want to spend a lot of time in the kitchen.

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

Mahi is so mild that, to me, this recipe needs a little more oomph for seasoning on the fish. So I used the marinade from another recipe from this site (Grilled Fish tacos with Chipotle-Lime Dressing), and it was awesome on the grill! The reason I rated this recipe a 4 was for the salsa and dressing - LOVE! In fact, after we were finished with our tacos, I kept picking at the salsa until to my surprise, I'd finished it off! Really delicious.

Garlic Chicken

There might be more sophisticated garlic chicken recipes out there, but I give this recipe 5 stars because in addition to being delicious, it takes only a few recipes and is a snap to make! I didn't change a thing from the recipe. Was great with a quinoa side dish and glazed carrots. Yum!

Make-Ahead Sour Cream Coffee Cake

Awesome cake! We were asked to bring a coffee cake to church one Sunday, and I'd never made one before. This cake was so easy, but it was really moist and delicious! My pan was the first one emptied, which was sad (because I didn't have any left to take back home).

Grilled Fish Tacos with Chipotle-Lime Dressing

I've been looking for a great fish taco recipe, and I was psyched to try this one. Unfortunately, I was disappointed. It's not that the recipe is bad; it's just not great. I was looking for something that really tantalized my taste buds, but this was just so-so. Nothing popped. For the amount of work, it's easier and tastier (in my opinion) to just make regular chicken tacos in the crockpot.

Shrimp Lemon Pepper Linguini

I generally love lemon -- the more, the better! -- but I think the juice of one lemon was too much for this recipe. Maybe my lemon was too large or juicy, but the overall effect was too acidic. Overall, the recipe's not bad. I'll probably try it again, just with less lemon juice.

Slow Cooker Reuben Dip

I'm not even much of a reuben fan, but I really liked this dip -- as did the other partiers! I thought I might have to double the recipe, but one batch really does make a lot, especially if you're going to a potluck setting where there's a lot of other food. Once the dip is heated through and is nice and creamy, you'll want to change the heat setting to low, but even as it got a little browned and crispy around the edges, we decided that was the best part! By the way, a lot of others have said they doubled the 1000 island dressing, but I didn't think that was necessary (then again, I'm not a huge 1000 Island fan, either!)

Cheesy Amish Breakfast Casserole

Gluten-free! My husband was recently diagnosed with celiac disease, so I've had to change a lot of my regular recipes. When we needed to provide a breakfast casserole for a church brunch, I decided to give this recipe a try, so that my husband would have a dish he knew would be safe to eat. It was delicious! In fact, this is one gluten-free recipe that holds its own against other recipes that call for condensed soups, breads, etc. It was a good thing my husband got his helping right away, because the pan was soon empty, so others must have agreed. Thanks for sharing!

Cheese Stuffed Mushroom Appetizer

This is the foundation for a delicious appetizer! The tang of the goat cheese is excellent and mixes wonderfully with the mushroom. However, in my opinion, there needs to be a little acid and/or crunch to balance the creaminess of all the cheese in this dish. Otherwise, the richness quickly becomes overwhelming. So, when made the dish a second time, I increased the amount of onion and added a few finely chopped sun-dried tomatoes to the cheese mixture. I also sauted the mushrooms, onion, garlic and tomatoes for just a few minutes, then I mixed them with the cheeses and a little fresh ground Italian seasoning. To give the mushrooms a little crunch, I mixed breadcrumbs with some melted butter and topped the stuffed mushrooms. I cooked the mushrooms as indicated in the original recipe, and everything was done through very nicely. Delicious!!

Slow Cooker Beef Stroganoff I

I followed the suggestions of others and added a bouillon cube during cooking. I also reduced the amount of cream cheese and added a little sour cream, as well as sauteed mushrooms at the end. Very good, but in my opinion, would have been lacking without the mushrooms.
