Fluffy Pancakes

Good and fluffy. Taste is good. I followed the recipe and doubled it (which made 10 med/lg pancakes). Took away one start b/c it's so thick that it makes it hard to spread out on the griddle.

Grandad's Pancakes

Too wet, flat, rubbery. The only thing I did different was the substitute for buttermilk. I can't imagine this is why they were so bad.

Easy Lemon Cookies

My first lemon cookie attempt and these were good. I doubled the extract amount and it probably could've used a little more. That's really depends on the person. I made bigger cookies and only got about 15, so I guess the original recipe calls for really little cookies. They were soft, chewy, and slightly crispy on the bottom. I baked mine at 375 for 9-11 minute.

To Die For Blueberry Muffins

Made these a few days ago and they really were the best blueberry muffins I've had. I followed the directions exactly and these turned out wonderful! I loved the cinnamon sugar crumb topping and the over-sized look to the muffin. Next time I need to make a double batch of these :)

Clark's Quiche

This was the first time I made quiche and it turned out wonderful!! The only ingredient I didn't have was the mushrooms. It was pretty time consuming and kind of costly, but it was worth it! I made two so I could freeze one for another day and I'm so glad I did. This is great for brunches, holiday breakfast, etc. Will make again!

Grandma's Lemon Meringue Pie

This was my first time in making a lemon meringue pie and it turned out ok. I will say that the lemon filling had good flavor and it wasn't runny. I guess my main complaint was that it there wasn't very much filling or meringue. I guess I'm used to seeing pies that have a lot more to each layer. I'm not sure if I did something wrong or if this is just how this recipe is.

Asian Orange Chicken

Followed the recipe exactly and it was good. However, I didn't care for the way the breading was on the chicken. We like a thicker, crunchier texture, so next time we'll simply use another breading method from a cashew chicken recipe we have. But the flavor of the orange sauce was really good!

Campbell's® Easy Chicken and Cheese Enchiladas

This is a really good recipe that I've been making for a few years now. It's probably our favorite chicken enchilada recipe so far. I didn't need to make any changes, and the fresh tomatoes and green onions on top really give it that extra kick of flavor.

To Die For Fettuccine Alfredo

I'm not sure this is "to die for" :), but it is really good and so far it's my favorite Alfredo sauce recipe. It's very creamy and rich and my boys love it! I made it and topped it with pan seared chicken. We'll make it again!

Real Chiles Rellenos

I have to admit that I've never had chile rellenos before making this recipe, so I didn't have any idea as to how they were supposed to turn out. However, my husband grew up eating them and he thought they turned out great in texture and flavor. Neither one of us liked the sauce though. We'll skip that next time.

Quick and Easy Pizza Crust

Great quick dough recipe. I was surprised at how thick the dough became after cooking, but it tasted great. I cooked it about 18 minutes @ 450. The only down side was I apparently needed to add even more cheese and pepperoni (I had covered it) b/c after rising so much it looked like it had hardly any pepperoni or cheese. I will definitely use this recipe again though!

Slow Cooker Carnitas

Springfield Style Cashew Chicken I

I followed the recipe with her second review, minus the oyster sauce. It was my first time making cashew chicken and it was great, tasted just like what we eat here in Springfield :) I had to add just a little more cornstarch mixture to my gravy because I like it thicker, but the overall taste was wonderful. I served it on a bed of white rice with the toasted cashews and fresh chopped green onion.

Special Buttercream Frosting

I had to make this a couple of times for it to turn out right. The first time I used butter flavored shortening and that was a mistake. Icing had great consistency but tasted like a glob of butter. The second time I used regular shortening. The end result was great consistency but hardly any flavor. I ended up adding almond extract and a little milk in the end and it was great!

Slow Cooker Chicken and Dumplings

A wonderful dish and very easy to make! A lot of flavor, the dumplings were perfect consistency and so was the soup/gravy. I didn't have to thicken it at all. My ingredients had to be adjusted a little for what was on hand. I started with 2 skinless breasts on the bone, covered them with 2 cups of stock (made with bullion cubes), the onion, soup, and butter, and then laid a few celery stalks (top halves) on top. I cooked this on high for 3 hours and then took out the celery, cut the chicken off of the bone (but didn't shred yet) and put it back in and added the dumplings. I didn't even use one full can of biscuits. I smashed each one a little and then cut them into about 6 chunks and dropped them in until it covered the top layer. I continued to cook on high for another 90 minutes and they were perfect! I also added some salt & pepper and shredded the chicken and that was it. Only adjustment for next time was to add more chicken and there needed to be just a little more of the soup/gravy mixture. A great recipe!!

Italian Breaded Pork Chops

These were good pork chops. I only used 2 eggs and 2 tbsp of milk. I also only used 2/3 of the breading mix and it was more than enough. They browned beautifully and had a lot more flavor compared to just breaded chops. I'll make this again!
