Strawberry Muffins
These came out okay. I made some changes that all seemed to work so thought I'd mention them here. I added a little vanilla and cinnamon. I left the sugar as is. I got rid of the oil and substituted it with low-fat vanilla yoghurt. I had to add about another 1/4 C of milk but not sure if that was because of the sub or because I used skimmed milk or just because of the recipe, but the dough was elastic and not the normal 'gloopy' muffin batter. I filled all the muffin cases halfway, added a scant teaspoon of strawberry jam, and then covered them up. Very tasty and low in fat (even if not low in sugar ;) )

Gnocchi Bake
Tasty and quick! Added onion and garlic to the sausage. I was also careful to get all the fat I could out of the sausage and cut back on the cheese to make it healthier.

Chicken Pot Pie VIII
This was excellent! My first attempt at a pot pie and it was fine. Maybe a deep dish pan would have been better though - it was *full*, so I wasn't able to put in any frozen peas but will next time. The pastry turned out really well which was my biggest fear as I am with pastry! But it came together fine and rolled out well and browned nicely without a wash. I did parboil the veggies because I wanted creamy comfort food without any crunch. I'm already wondering when I can have this again!
