Sloppy Joes II

Reviewed: Jun. 6, 2014
Great recipe! I loved the flavor. My family said it resembled Manwich but had a bit too much of a "ketchupy" taste so next time I think I'll cut the ketchup down to 1/2 cup like a couple others had commented. I also added a dash of Worcestershire as someone had recommended. Loved the addition. With these couple of tweaks I think I will keep this on my regular to make list for manwich night. So long cans!

Lemon Cream Cheese Frosting

Reviewed: May 13, 2014
I rated it a 4 but would have rated it a 5 if it called for less sugar. I only used 1 cup of powdered sugar as someone else suggested. I made this with the 5 ounces (about 1 cup) and it was perfect. I loved the bright flavor. I used this on a lemon poppy seed cake and it was perfect! Thanks for the recipe!

Taco Bell® Seasoning Copycat

Reviewed: Mar. 5, 2014
Family loved it! I think it was spot on! I did double the recipe because I used it on ground deer (which is a bit gamier). Wonderful flavor and I will no longer be buying the taco bell seasonings as I will be using this from now on! Thanks for sharing!

Szechwan Shrimp

Reviewed: Feb. 5, 2014
Love this recipe. Very simple and flavorful. I did add a diced onion and one diced red pepper for a bit of crunch, color and added sweetness. Will be making it again. I did do as someone suggested and doubled the sauce...well worth it. Thanks for sharing!

Creamy Pesto Gnocchi with Italian Sausage

Reviewed: Jan. 17, 2014
Loved it! I thought it had great flavor and followed the recipe. I used homemade pesto which I think makes a huge difference. Fresh, flavorful basil is the star of the dish. I did also add home grown tomatoes roasted in olive oil last summer...diced up. The tomatoes really vamped up the flavor of the basil. I added light cream as it said too even though several reviews said it wasn't needed. The cream adds...well...creaminess to the whole dish so I don't think I'll leave that out. Thanks for sharing! This will definitely be made again!

Cheesy Corn Casserole

Reviewed: Nov. 28, 2013
This was a hit out Thanksgiving! For the most part I followed the recipe ...I did not put the cheese on the top of it (just in it) and I also added a can of green chilis. Oh, I also added a dash of garlic powder. Will be making this again. Thanks for sharing.

Pumpkin Fudge

Reviewed: Nov. 28, 2013
This was great! I did as one reviewer commented and just added the ingredients and did not stir until it reached 110. My little hand mixer would not whip it up so I put it in my kitchenaide and it creamed it beautifully. Will know next time to pour straight into my mixer bowl instead of trying with a small hand blender. HIGHLY recommend. Will be making this again. Thanks for sharing!

Frank's Favorite Slow-Cooker Thai Chicken

Reviewed: Nov. 12, 2013
I thought this was a quick, delicious dinner! Super easy. I did as suggested and only used 1/2 of the salsa that it says too, and also used whole coconut milk along with creamy peanut butter. Oh and I added a couple tsps of crushed red pepper for a bit of spice. I doubled the sauce because we love extra sauce and the can was 13 ounces so it worked out perfectly. I used powdered ginger as I did not have fresh ginger. Flavor was still wonderful. I served this over rice noodles. I will be making this a regular slow cooker recipe. Thanks for sharing!

Simple, Classic Chicken Potpie

Reviewed: Oct. 29, 2013
Fantastic comfort food to the max! I couldn't find my Mum's recipe so I was in search of something similar...found it! :) I did use 2% milk in place of evaporated milk and used all stock. Will be making this again and again. Very down home and wonderful. I did make my own crust with a ration of 1 part flour to 1/4 of butter and 1/4 crisco (by weight) and a dash of salt...My mum's recipe for crust and it's always buttery and flakey. I did do a one pot type of cooking. Did the veggies and instead of heating the milk in the microwave I added the flour to the veggies and cooked for a couple minutes to get rid of the "flour" taste. (the roux) and then added the chicken stock and milk (cold) and stirred briskly then added the chicken back in. Turned out perfect...no lumps. :) Absolutely yummy! Thanks for the recipe!

Candied Almonds

Reviewed: Oct. 13, 2013
LOVE LOVE LOVE these! I did as suggested by a couple of others and made sure the liquid was gone and boy oh boy does it go quickly when it does! I also added a splash of vanilla and used brown sugar to get the molasses taste. Will do it this way again. I think I will be adding this to our Christmas gift giving. :) Thanks so much for sharing! This was perfect!

Creamed Chicken for Biscuits

Reviewed: Oct. 10, 2013
Yummy! Will be adding this to my regular meals menu. It was so simple to make and I love that it didn't need a can of something in the recipe. I did do as suggested by other reviews and used 1 cup cream and 1 cup 2% milk. I also left out the almonds. I added mushrooms and 1/2 a chopped onion. I used frozen peas and carrots. Wonderful. I used Red Lobster Cheddar bay biscuit mix and topped with its batter in "lumps" and baked in the oven for 15 minutes to cook the biscuits. The added garlic from the biscuits added the perfect touch. If I make this without these biscuits I think I will add extra garlic (oh and I used minced fresh). Thanks for sharing a great repeat recipe!

Rice and Beef Stuffed Tomatoes

Reviewed: Oct. 2, 2013
Great Recipe! I did a couple things different...I used leftover shredded beef from a pot roast with onions. (it had the garlic flavor in the roast.) I did not use the tomato sauce...just used the homegrown tomato juices and meats from the center of the tomato and followed the directions from there. I had cooked rice already so I mixed the shredded beef, tomato and juices together and any other ingredients and put right into the tomato. Cooked as directed and it came out perfect. I will be making this again. Thanks for the recipe!

Jalapeno Poppers I

Reviewed: Oct. 2, 2013
These are tasty! I love that they are baked. I used panko breading as someone suggested. Definitely crunchy this way. I also used fresh, from the garden Jalapeno's and definitely had plenty of spice. I did what several recommended since it made so many and froze leftovers after they cooled off. This made more then 30 halves. I think I used 24 jalapenos so have a few extra on hand just in case. Can't wait to use them reheated without the hassle. They are a bit time consuming but very worth it. Thanks for sharing!

Classy Chicken

Reviewed: Sep. 25, 2013
This was a good recipe. I did use all chicken stock since I did not have any white wine at the moment. It has a really good taste. I did however, only used 1/2 of the amount of dried dill due to comments of it being too strong. I do agree with someone else's comment about the zucchini tasting a bit like cucumbers after cooking. I had to think twice about whether I put the wrong veggie in (homegrown) so I would say it does have the mild pickle taste. All in all I will be making this again and next time trying it with the white wine in hopes it would give it a bit of a stronger flavored sauce. Thanks for sharing the recipe. I will definitely be making this again with a few changes...less dill and using wine. Thanks for sharing! :)

Tortillas II

Reviewed: Sep. 17, 2013
These are great! Didn't change a thing (wait...did use butter instead of shortening) and will definitely be making these instead of store bought from now on. SUPER SIMPLE! My two daughters, 11 and 14 had a blast making these and rolling them out. I think they have great flavor and depending on how they were rolled out...either resembled "gordita" type bread or regular flour tortillas. Both my girls did a batch each. One made 9 tortillas and the other made 7. (the batch that made 7 were thicker and more like the gordita type bread) Yummy! Thanks for sharing the recipe! :)

Mom's Zucchini Bread

Reviewed: Aug. 15, 2013
Delicious! I will be making this again and again. I did make a couple of changes though... reduced the oil down to 1/2 cup and added 1/4 cup water...I did this because I increased the zucchini to 5 cups. It's what I had and I didn't want to waste it. Turned out moist and super delicious. Thanks for sharing the recipe!! :)

Stir-Fried Chicken With Pineapple and Peppers

Reviewed: Aug. 8, 2013
Wonderful! I did add a couple dashes of cayenne pepper to give it a kick as well as additional vegetables such as mushrooms, zucchini from the garden and even celery. Since I added additional veggies I added 1/2 cup of water to give it a bit more sauce. Perfect.. Will be making this over and over and over. Thanks for the recipe!

Broiler Icing

Reviewed: Aug. 4, 2013
Love it! Very simple and yet very tasty. I put this on a banana brownie recipe and it was perfect! Keeps the cake/brownie nice and moist. I did use milk instead of cream and I did omit the coconut (but only because my hubby doesn't like coconut)....will use again and again. Thanks!

Delicious Salmon

Reviewed: Jun. 10, 2013
Delicious Salmon is the perfect name! Wonderful Teriyaki flavor. I didn't have lemon pepper so I used lemon juice and pepper. I also only marinated it for a couple of hours. Perfect. I baked under the broiler for about 10 minutes and lined the deep dish I baked it in with aluminum foil for a quick easy clean up. I didn't discard the leftover marinade but poured it into a small pot and brought it to a boil then reduced with some cornstarch for a sauce to pour over the fish. Tasty. Will definitely be making this over and over. Oh and served it with Brown rice. Thanks for sharing! It's fantastic! :)

Jay's Signature Pizza Crust

Reviewed: Apr. 8, 2013
Loved it! I did do as suggested and added 1 tsp of salt and an additional 1/2 tsp of brown sugar bringing that to 1 tsp. I used my kitchenaid mixer with a dough hook and went ahead and added 3 cups of flour to start...then added until it became thick enough to move to a floured board and that was maybe an additional 1/2 to 3/4 cup of flour? I only moved to the board the dough to the board so that I could oil the mixer bowl and put the dough back in. (no need in making two bowls dirty)...I used the quick rise yeast and I think 30 minutes was all it took to double. The crust was soft and yet had a crunchy texture. My husband definitely agreed in using this recipe again! Thanks so much for sharing! It was definitely easy to make! :) Update: 6/7/14 I used this exact recipe to make the bread for Bierocks. Perfect! The bread was perfect for this recipe and so quick to make! I cut it into 12 pieces and rolled them out like mini pizzas to put the filling in...then put in oven at 425 for 10 minutes. Can't say enough good things about it! Will keep this as my go to recipe for that too!
