Chocolate Fudge Cookies

West African Peanut Soup

This soup is AWESOME! I had it for the first time in 2008 at a writers' retreat. The retreat took place at Lake Logan, NC and the staff there made this our first night. They ended up handing out quite a few copies of the recipe as everyone really loved it. It's just the right spicy, so very tasty, and not too difficult to make. Perfect.

Cake Mix Cookies I

I love these cookies. I haven't had a problem with them getting "tough" as mentioned. Maybe because I only bake them for the shortest amount of time listed. I have had so many requests for my devil's food, mint chip version of these. I use devil's food cake mix and the Ande's mint baking pieces. Oh so yummy. I've also been making them for bake sales. I actually use a coffee scoop to measure out the dough into an even size for each cookie. I get nearly 30 cookies from one batch that way, and the dough never sticks in the scoop. Tap the side and it comes right out.

Cake Balls

This is one of my favorite recipes and always a hit when I make it. The two most favorite flavors for those I've made it for are the Red Velvet with Cream Cheese Frosting and Strawberry Cake and Frosting. I always use the chocolate almond bark (candy coating), but I'm betting the white coating would be good as well. Also, after mixing the cake and frosting together, definitely put in the refrigerator for about an hour. Makes it much easier. And I just toss a couple of the balls into the melted chocolate then roll them around and fish them out with a fork. I originally found this recipe under the name Cake Bites and using chocolate chips for the coating. The candy coating works so very much better.

Wake-Up Casserole

My husband loves it when I make this. It's very easy to put together, too. I usually use tater tots which works out well. I also buy a 1-lb package of pre-diced ham, which makes it even easier. Great with mushrooms added (sprinkle on with ham) and also works well with sausage. I have used egg substitute instead of eggs as well with great results. This is a very versatile dish and handles changes well.
