Roasted Loin of Pork with Pan Gravy

Did a cup of water in the roasting pan and used the drippings for the gravy, instead of pork broth. Also didn't strain the gravy. We definitely liked it and will do it again. It is slightly spicy though just for those who don't care for spicier dishes. I made this basically to see how the gravy would workout...and it's definitely 5 star!

Quick and Easy Alfredo Sauce

Always wondered how they did that sauce with those one skillet meals...now I know. It's not that bad that I would not do it again if I needed a fast and very simple alfredo sauce, as in a sudden menu change. However I would not use this recipe to attempt to demonstrate my skills making sauces. To me it simply doesn't have a lot of zing or make a very strong impression. I would use minced garlic and very coarsely ground pepper for starters. Like I said it's a beginning but leaves a lot of room for improvisations and improvement, but I did save it for future tweaking!

Remarkable Fudge

Not sure you can get to 240 in a double boiler...:/ I did a double boil, first boil with sugar, 2 sticks of real butter and evaporated milk roiling for a couple of minutes then off heat... added the morsels stirring constantly and reheated to a second boil for another 3-4 min to finish melting them...med to just under a med high heat both times finally added nuts and into a lightly greased glass dish, allowed to cool non a rack for an hour then into the fridge to finish chilling...also I did use a whole can..12 oz of evap milk... Turned out fantastic, set up quick and fisnished firm and smooth texture not even grainy.. I think Grandma would be proud my first time ever and it literally melts on your tongue with amazing flavor
