To Die For Blueberry Muffins

Great recipe! I ran through the ingredients as posted with just a couple changes. I doubled the blueberries, added a tsp of lemon juice (will add a little more next time), and used brown sugar for the topping. When I filled 4 jumbo muffin cups 3/4 full I had enough batter left and decided to make some minis as well. Topping amount was good for all muffins. I put both pans in the oven at the same time and pulled the mini pan out after about 13 minutes. Thanks for sharing this recipe!!

Grandma's Gingersnap Cookies

This is a fantastic recipe and sooo easy! I made them for a cookie party and then a couple weeks later for a potluck with rave reviews all around. I followed the recipe as is, but like several others added clove and nutmeg. I discovered I didn't have a sifter so I added the dry ingredients to my blender and pulsed it a few times. The end result was a perfect slightly cracked cookie surface.

Italian Wedding Soup I

Great recipe! Per other reviews this is what I did: browned meatballs in olive oil and used turkey instead of ground beef, added celery, and only used about 1/3 of the orzo pasta. I waited until just before serving to add the pasta and just cooked it in the soup. That worked out great since I was done simmering it. Thanks for the recipe and all the suggestions!

PHILLY Make-Ahead Spinach Phyllo Roll-Ups

Fantastic recipe! As another reviewer mentioned, I added mozzarella to the filling but otherwise made them as is. This was my first time with phyllo so that was a treat, but overall this recipe was very easy. I prepared the night before and baked in the morning before work; it worked like a dream and they were a huge hit at the party! This one will be made again and again.

Awesome Baked Sea Scallops

Fantastic! Easy too. I ended up getting 1lb of smaller bay scallops and this recipe was perfect. I also sprinkled fresh parsley over the scallops before adding the bread crumbs (I also used Italian seasoned crumbs) and allowed the flavors to blend. I'd never used shallot before so I'm assuming it was 2 sections of shallots not 2 whole; it was a little strong. I'll definitely make this again!

Black Bean Salsa Soup

Easy and fantastic! I left out the carrot and celery due to personal preference and it was still great. I put a spoonfull of sour cream in the bowl before adding soup and topped with Mexican cheese blend. The cool and cheesy addition was a nice touch. I'll definitely make again.

Chocolate Cookie Cheesecake

My daughter and I made this for Mother's Day and can I just say Awesome!! We used Oreos for the crust (since my grocery didn't have Oreo crumbs we used actual cookies) and blended all the removed cream filling into the batter. The cookies made a fantastic crust, but for the 2c of crumbs we ended up using 1stick butter rather than 2tbsp. We used a combination of chocolate and regular double stuffed Oreos for the cookie chunks within the batter and did 2 layers instead of 1. Finished cake had a great consistency, not too dense, and the chocolate, which we added prior to leaving the house, stayed room temp which made it firm, not runny or hard. We garnished with a circle of alternated double stuffed Oreos for a great presentation. My daughter called it "Chocolate Cookie Cheesecake with a Touch of Genius" and it definitely lived up to the label. Will definitely do again, family loved it!

Oatmeal Whole Wheat Quick Bread

This bread had a great flavor and was super easy to make (my 10yr old actually made it!), but didn't bake well at the recommended temp/time. I will try again and follow earlier suggestions of lower temp for longer time. We added a tablespoon of soy protein powder to make it extra healthy.

Easy and Elegant Pork Tenderloin

This was fantistic...I finally made pork without it being super dry. I used a marinated tenderloin along with the Italian seasoned crumbs. The whole family loved it! Thanks for the idea

Tofu and Rice Stuffed Peppers

Great recipe. I skipped the salt and used a salt-free seasoning instead; I also added a little red onion. I followed the water measurements in this recipe rather than my brown rice container and ended up with dry rice. I should've known better. This was very easy to make and I will definitely make again! My boyfriend absolutely loved it!!

Fudge Bottomed Chocolate Layer Pie

This recipe was very easy to do. I made it for Christmas dessert and it was a huge hit. I got a little creative with it and used chocolate whipped topping and then added french vanilla topping for the top layer. Very rich, but delicious!
