Crepes with Spinach, Bacon and Mushroom Filling

This is a good general recipe for crepes, allowing for a variety of substitutions in the filling. The bechemel brought the filling together wonderfully, but the sauce... I'm not sure how that was supposed to work. I followed the directions exactly and got a thin, runny, much too lemony liquid. It took about 10 minutes of constant whisking on medium heat to acheive enough thickening to call it a sauce. It wasn't terrible, but the lemon was overpowering and it had a slightly grainy texture.

Apple Braised Pork

Absolutely delicious! My 5.5 lb roast took 1 hr 50 mins to reach temp, but the meat was perfectly moist and tender. Thank you for sharing - it's a keeper!

Pan-Seared Duck Breast with Blueberry Sauce

The rich and varied ingredient list made me think that this would be the perfect dish for some wild duck breasts that a friend gave us. Unfortunately, it just wasn't enough to take the gamey-ness out of the meat and the overall sentiment of our family was that the flavors were just too overpowering - too many different tastes that didn't seem to mesh well. I don't know if it would be different with store-bought duck, but I probably won't be giving this a second try:(

Unbelievably Awesome Barbeque Chicken Pizza

The simple addition of the sesame oil made the flavor of the chicken sing! After cooking, I shredded it up and put it back in the pan to coat with the yummy sauce. I used my homemade crust with a little mesquite seasoning mixed in, omitted the cilantro (didn't have any but will try it next time), and added an extra cup of colby-jack cheese. This is a keeper!

Broccoli with Roasted Red Peppers

I followed the recipe exactly and LOVED the results! The vinegar infusion of the peppers complimented the broccoli perfectly without making the whole dish overpowering. A delicious change from the usual broccoli side dish and good enough to serve for special occasions. Next time, I may try Balsamic vinegar because I love it.

Red Snapper Livornese

I would have given this 4 stars were it not for the snapper - cod would probably have been a better choice. The sauce was delicious - served it with couscous as suggested, but hubby hates olives and kids hate capers, so I probably won't get a chance to try this again.

Wonderful Short Ribs

This was my first try at short ribs - and they were Wonderful! I made the recipe as instructed, but had to limit cook time to 2 hours total (recipe heading says 2 hrs, but directions say 2 1/2 hrs). I also took the cover off during the last 30 minutes to thicken up the sauce. The meat was tender enough, but would probably have been even more so with additional cook time. I will definitely try this one again to find out! I served it with roasted butternut squash and broccoli, but the amount of sauce produced needs something to soak it up - maybe pasta, brown rice or spaghetti squash?

Mexican Shredded Beef

So easy and delicious! I omitted the browning step as it makes the meat harder to shred, and left out the water as it's not necessary in my crock pot. I also added cumin and adjusted the spices to taste. This is great in any dish that calls for shredded beef, but we also enjoy it simply served with warmed tortillas and salsa.

Red Potato Salad

This was an easy and awesome recipe. I agree with the other comments that it needed a bit more salt, but the dill, garlic and dijon were perfect. This one will have its place as our favorite red potato salad of all time!

Crispy Orange Beef

This wasn't as hard to make as it first appeared. The sauce was incredible, but for some reason the flavor didn't stick to the beef as much as I would have liked. The beef turned out too chewy and a bit bland. I think that next time I will incorporate the broccoli into the beef and sauce mixture, and maybe add some "accent" to the beef before starching it.

Indian Chicken Curry II

A very delicious curry recipe! I did not have yogurt, so I used sour cream and it turned out wonderfully! I'll try it with yogurt next time to see if it makes a difference.

Millie Pasquinelli's Fried Chicken

Ditto to the last review! This was wonderful and easy. I added an extra coating of flour for crispier chicken and it turned out crispy on the outside and moist and delicious on the inside. Thank you Millie!!

Hot Pizza Dip

Roast Beef and Cheese Roll Ups

These were easy and delicious. They did turn out a bit too salty, so I'll have to find ways to cut some of the sodium out. Also, I found 2 tsp. italian seasoning to be a little too much - I will reduce that to 1 tsp. next time. Otherwise, it was a big hit!

Easy Eggplant Pita

This made for an easy summer meal. It needed more oil - I used 2 TBSP, and salt to taste. Also, my family didn't care at all for the green bell pepper. Next time I will substitute red instead.

Asian Beef Skewers

This was wonderful! I didn't have any green onions, but used 1 tsp onion powder instead. The hoisin made the sauce stick to the skewers. I have also made this using shrimp with excellent results! Serve with grilled zucchini, fresh pineapple and steamed rice on the side! Yum!

Mean Old Chili

I loved the flavors that the marinade imparted along with the grilled flavor of the meat. Due to my family's tender tongues, however, I did make some changes. I reduced the red pepper flakes in the marinade to 1/2 teaspoon, omitted the fresh hot chilies altogether, and roasted the red pepper whole on the grill, then chopped it. Then I threw everything into my slow cooker using 2 (14oz) cans (undrained) of diced tomatoes with green chilies instead of fresh. It gave just enough of a bite to make my 9 year old wimper and saved us old folks some grief in the chest area! I can't imagine all that pepper, though...ouch! This is definitely a keeper!

Honey Cornbread

I really liked this bread. It was easy enough for my 9 year old daughter and I to make together and came out moist and crumbly as promised. It was a little bit sweeter than I like my cornbread. I may try to omit the sugar the next time I make it.
