Baked Onion Dip I

This dip was such a hit at our last get together! Based on other reviewers comments about it being a little oily, instead of the 2 cups of mayonaise, I put a block of softened low-fat cream cheese and 8-oz of low fat sour cream into a 2-cup measuring cup and topped it off with mayonaise to make 2 cups. I also used sweet Vidalia onions. This was so-o-o good!!

Betsy's Mandarin Orange Salad

My whole family absolutely loved this salad! I used Sugar Twin instead of the sugar, but while this worked very well in the dressing, it did not go over when cooking the amonds. This is a keeper!

Microwaved Potatoes Lyonnaise

My whole family loved this recipe. It was both delicious and easy! I added the 4 tbsp butter as other reviewers had suggested and the potatoes seemed to swim in the butter. Next time I'll cut back on the butter, but I'll definitly make this again!

Skillet Herbed Chicken with Mustard

This was delicious! The chicken was so tender and the recipe was very simple. I halved the tarragon based on previous reviews. My daughter only gave this 3 stars, but I don't know why!

Egg and Cheese Puffs

I almost didn't make these after reading the reviews about the puffs sticking in the pan but decided to give it a try anyway. I have 2 muffin pans, one new and the other quite used. The puffs slid right out of the newer pan but stuck in the older one leaving me to believe the pan might be the cause of the issue of their sticking. I would also use only 1/4 c of butter next time.

Red and Sweet Potato Salad

This is such a good and unusual potato salad. Coating the warm potatoes in the vinegar mixture gives this salad a slightly tangy taste. This is a keeper!

Uncooked Banana Pudding

I made this a little more healthy by using only low-fat/non-fat ingredients (mostly low-fat). No one could tell, not even the "dessert snobs"! I got it down to 3 - 4 points per serving.

Spaghetti Pie II

This was an excellent recipe. I had trouble getting the spaghetti to form a dense enough crust so the "pie" fell apart when serving. But the taste was so fantastic, it's worth the effort of tweaking it. Used fresh mozzarella cheese, a jar sauce (I was feeling a bit lazy) and meatballs instead of the ground beef sauce, per my son's request. I will definitely be making this one again!
