Tacos De Matamoros

Made exactly per the recipe and it is wonderful. I personally would omit the garlic powder, but other than that it is a winner. Authentic version of a classic American dish- my mom is from New Mexico and didn't have a taco until she was a teen visiting California.

Super Sausage Gravy

Spicy Slow-Cooked Chili

Really good chili. I added a can of pinto beans and a can of tomatoes with green chilies. We like our chili a little spicier so I went ahead and added another tablespoon of chili powder near the end. I cooked it on high for 5 hours, and spooned it over a corn bread casserole topped with sour cream and cheese. Yum!!

Frogmore Stew

This was excellent. I made this for Father's Day because both my dad and husband love shrimp. Winner, Winner. So easy, and the shrimp came out just right, juicy and delicious. I made Tartar and Cocktail sauce and everyone loved the Tartar with their potatoes. I put the sausage in first , then the potatoes, then corn and at the last, turned the heat off and put in the shrimp, covered and let sit for 10 minutes. Drained and put it all on a huge platter. Excellent!!!

Caramelized Chicken Wings

These are phenomenal. Made them last night and followed recipe to a T. Spectacular. Love that it is a stove top recipe, not fried or baked. They are delicious, sticky and poof!!!, gone.

Slow Cooker Chicken and Dumplings

This is definitely an excellent base to build a truly wonderful comfort food meal upon. I have made this several times always with rave reviews from everyone who eats it. I omit the onion because I find cooking it for long periods of time in slow cookers it overtakes the whole dish. I do add 2 cups of organic chicken broth. I also prefer adding veges. What ever I have on hand, typically frozen peas, carrots, and or corn. This last time I also added a small amount of frozen corn and cut up fingerling potatoes. I always season with lots of black pepper and onion powder and thyme. I have even put the chicken in frozen. Delicious. Thank you for the recipe.

Iowa Maid-Rites

Not even close to a true Iowa Maidrite sandwich. But they are tasty because of all the onion seasoning. Needs alot of tweaking to be useful in any other recipes though. Sorry.

Slow Cooker Chicken Taco Soup

This is a really good recipe. Since I don't buy Taco seasoning, I added my own version which is eerily similar to Bill Echols. I also opted for a Summer Shanty Ale for the beer part and it added a nice tang. Put everything in the crockpot at lunch on high until I got home at 5 and then shredded the chicken, and turned it to low for another hour. Topped with favorites like sour cream, shredded cheese, green onion, avocado and fresh cilantro-My family devoured it.

This was a hit at work. I added the rind from a brick of Parmigianno Regiano and it added wonderful depth to this hearty soup. I also added a quart of homemade chicken broth instead of canned. I omitted all but 1 cup of the tomato sauce and added a can of diced tomatoes. Really even better the next day. also I through it all in a crockpot , really easy.

Summer Zucchini Casserole

This recipe has great potential! My family likes a little more "kick" so I added diced red pepper, garlic, sliced mushrooms and 1/2 cup ricotta cheese. another good way to utilize an abundance of summer squash!
