Caramel Frosting I

Easy, simple. This is a definite game changer for easy home made frosting. I used 1/4 cup of Almond Milk and it came out beautifully. Frosted a 10 x 15 pan of bars, no problem. An oops on my part also, I dumped the butter, brown sugar and almond milk in all at once, melted and then boiled for 1 1/2 minutes-perfect. Sometimes the oldies are the good ones. Thanks MaryKaye!

Chef John's Corned Beef and Cabbage

This is the standard other Corned beef recipes are compared to. I prefer to add a couple of bottles of beer for part of the water, just my preference. Resting the meat is critical and makes for easier slicing, rather than just having the meat fall apart-even tho theres nothing wrong with that either. Leftovers make for an awesome hash!

Tacos De Matamoros

Made exactly per the recipe and it is wonderful. I personally would omit the garlic powder, but other than that it is a winner. Authentic version of a classic American dish- my mom is from New Mexico and didn't have a taco until she was a teen visiting California.

This was and continues to be one of my families favorite winter night meals. This is so easily prepared and is great just on its own or paired with a fresh green salad and a nice beer, makes a company meal as well.

Spicy Slow-Cooked Chili

Really good chili. I added a can of pinto beans and a can of tomatoes with green chilies. We like our chili a little spicier so I went ahead and added another tablespoon of chili powder near the end. I cooked it on high for 5 hours, and spooned it over a corn bread casserole topped with sour cream and cheese. Yum!!

Frogmore Stew

This was excellent. I made this for Father's Day because both my dad and husband love shrimp. Winner, Winner. So easy, and the shrimp came out just right, juicy and delicious. I made Tartar and Cocktail sauce and everyone loved the Tartar with their potatoes. I put the sausage in first , then the potatoes, then corn and at the last, turned the heat off and put in the shrimp, covered and let sit for 10 minutes. Drained and put it all on a huge platter. Excellent!!!

These are phenomenal. Made them last night and followed recipe to a T. Spectacular. Love that it is a stove top recipe, not fried or baked. They are delicious, sticky and poof!!!, gone.

Slow Cooker Chicken and Dumplings

This is definitely an excellent base to build a truly wonderful comfort food meal upon. I have made this several times always with rave reviews from everyone who eats it. I omit the onion because I find cooking it for long periods of time in slow cookers it overtakes the whole dish. I do add 2 cups of organic chicken broth. I also prefer adding veges. What ever I have on hand, typically frozen peas, carrots, and or corn. This last time I also added a small amount of frozen corn and cut up fingerling potatoes. I always season with lots of black pepper and onion powder and thyme. I have even put the chicken in frozen. Delicious. Thank you for the recipe.
