Cucumber Salad With Thai Sweet Chili Vinaigrette

Great flavor!! I used a mandolin to slice the cucumbers so it was super fast to prepare. I used jarred garlic rather than the granulated garlic. I'm always happy to find Asian dishes without soy. This salad is not spicy in the least to me, especially with the added sugar, but I wouldn't change a thing! Honestly, I didn't think I was a big fan of cucumbers but I will be making this again!

Hawaiian Stuffed Peppers

These were pretty good, but the flavor was not unique enough to warrant the 2 hours+ it took to cook in my opinion. Somehow my rice took longer to cook than directed and I had to keep adding more coconut milk. You could not taste the five-spice at all; I would perhaps double it. I ate mine without cheese but my husband thought the pepper jack made for a strange combination. We both kept adding salt. I like the idea of this recipe but will not make again.

Hidden Treasures Ranch Pockets

I too used refrigerated biscuit dough instead of using the recipe's. It was super simple this way to stuff them. I used an onion, 1/2 bellpepper, and a small bag of rainbow slaw mix for the cabbage/carrot (no zucchini on hand). We really liked the flavor that the ranch mix gave to the filling. These are the perfect size for a grab and go breakfast, and the possibilities for the fillings are endless!

Smoky Chipotle Hummus

I hate to be a downer, but I really didn't like this. I'm not even sure why: I like all the ingredients that go into it. Maybe it's because not a single ingredient really stood out in flavor. It tasted vaguely like red pepper with a slightly smoky aftertaste. I don't think the cilantro did good things for it either, and I love cilantro. Thanks for sharing anyway!

Peking Pork Chops

I liked that this is made out of ingredients I usually have on hand. However, it mostly tasted like ketchup and it did not have an Asian flavor like I was expecting. We both agreed to never make it again.

Tofu Stroganoff

Guys, if you are ending up with a watery mess, you must remember to press your tofu!! This was a pretty decent meal. I only used one package of tofu. I am not a fan of cottage cheese so I also used ricotta instead. The soy sauce gave this the flavor that it needed, but if you are not a vegetarian, I would recommend adding a little beef bouillon for that extra depth. I was going to rate this 3 stars, pretty average, but since my husband loved this dish I bumped it up to 4. He has never given a big thumbs up to a vegetarian dish before! Thanks for sharing!

Roasted Yam and Kale Salad

This was good! Previously I'd only had kale in a soup, so I thought this looked like a nice and easy recipe to try it in. It was good both hot and cold. This is not something my husband would really go for on its own (maybe as a side dish), but I will make it again (more for me)!

Butter Chickpea Curry

I have made this several times using cauliflower instead of sweet potatoes. I also use fire roasted tomatoes instead of the soup and light coconut milk. The whole batch costs less than $10 to make, and with a side of rice, I fed myself and 5 friends! The level of spice is just right. I'm sure it'd be great with white or sweet potatoes, but I'm trying to limit my starches. This is a cheap, quick, and healthy meal. And guess what? My husband eats it without asking where the meat is! This has become a staple for me! Thanks for sharing, and thanks to the other reviewers for suggestions.

Queenie's Killer Tomato Bagel Sandwich

I'm not sure if I'd enjoy this for breakfast, but this makes a great snack/lunch! I prefer it on a toasted English muffin. Quick, healthy, and tasty. :)

Cabbage Stuffed Pita Pockets

Good, but it ended up a little dry. I used feta cheese rather than mozzarella, and since it was dry I added some plain greek yogurt as a sauce. It was also a little bland, so I added some fresh cilantro and it made it quite good with these changes.

Sweet and Spicy Sweet Potatoes

We LOVED these! Usually when a recipe is described as "spicy" I don't expect much; I can handle quite a bit. So I was pleased that these had a good balance between sweet and spicy. There is definitely heat here! Will make again for sure! UPDATE: The first time I made these I did not have the poultry seasoning. I tried them again with it included and thought it was way too strong. We def. prefer it without it!

Crunchy Green Beans

Wow, so simple yet so good! I did use chicken broth instead of water/beef bouillon. I didn't think i'd like the almonds in it but I was pleasantly surprised. I can get my husband to eat more veggies this way.

Apple and Pear Soup

I did not care for this recipe. I even used chicken stock and added onions like others suggested, but it was very sweet/tangy. Also thought it had too much ginger. Guess it just wasn't for me.

Eggnog Coffee Punch

This was pretty good; I thought there was too much eggnog and ice cream flavor rather than coffee flavor. If I make it again I will either make the coffee stronger or just use a higher proportion. As is this is VERY thick and sweet. I used pumpkin spice eggnog and liked the kick it gave. There's lots of flavored eggnogs out there that might be fun to experiment with.

Broccoli with Orange Sauce

Yum! I used fresh orange juice and only 3 teaspoons of sugar. I think using the full amount of sugar would have been too much, especially if you use an orange juice with added sugar. The sauce came out more like a jelly for me; I will use less cornstarch next time. But there will be a next time! This would be a great side with fish.

Curry Chicken Salad

This was a nice change from regular meat and cheese sandwiches. I made this for my husband's lunch, and though he rarely requests certain foods, he asked me to make this one again. He is not a fan of green onions so I left those out, but I think they would be a good addition. I also added some green grapes as he loves them in his tuna salad; I liked the slight sweetness they brought to it. Perhaps we like our salads bit more wet, but I added a little more mayo and more curry then called for. My husband claims he is not a fan of celery or relish, but he didn't complain about this once! It looks like this will become a staple for us!

Best Apple Salad

This was "unexpected" indeed! I added a stalk of celery I needed to use. I took off one star for it being overly sweet for me: I will use less honey next time. I plan to make this again to serve alongside porkchops. *ETA: This does NOT keep well. Eat the day of! Unfortunately I think eating the leftovers has turned me off from making this again...

Jamaican Spinach Soup

Severely bland as written. I tripled the spices and still ended up just dumping a bunch of curry powder into it so it'd taste like something. If you're not vegetarian definitely use chicken stock instead. Or just try another recipe...

Simple Kale Soup

Wow! This was my first experience cooking kale, and this was very simple and tasty. I used smoked sausage instead of turkey ham because I had it on hand. Also used more garlic and a touch of Worcestershire (because I love it). No other spices needed! I only had 6 cups of chicken broth and used 2 cups of water but it was still very flavorful. This would be great with an onion!
