Italian Peas

Wonderfully easy pea side dish that brings a lot of flavor. I added a few sliced mushrooms that I sauteed with the onion and garlic, and it made a nice addition. The best thing is you can throw this together last minute with very minimal work.

Raspberry Coconut Layer Bars

They were so good, I could not get them off my mind for the next couple of weeks!! The combination of raspberry, coconut and graham cracker just does something incredible to my taste buds and whatever that special something is...it makes my mouth do a happy dance like no tomorrow.

Creamy Chicken Lasagna

I roasted a turkey, and was looking for ways to use up the abundance of meat that I had in the fridge. I came across this recipe and figured I could just exchange the roasted turkey for chicken and it worked out just fine. I followed some of the suggestions and added sauteed yellow and green onion, red pepper, mushroom, garlic and red pepper flakes. I used roasted garlic spaghetti sauce from Trader Joes to save time and it worked out nicely. I went with three cups of mozzarella instead of two, and a 1/3rd cup of parmigiano reggiano. I forgot to add spinach, and wished that I had as it was a bit on the rich side. I substituted a spinach side salad which helped. If I were to make this again, I think I would layer in either yellow squash or zucchini.

Cajun Potato Soup

Loved this soup. I added about a half pound of Hot Italian sausage and about a pound of pear and gouda sausage instead of the andouille. I also used half and half instead of heavy cream, and kale instead of spinach. I put just a touch of flour in while frying to thicken it up a little bit. Oh, I also put a few dried red peppers from a bush that I have hanging as well as some Dave's Insanity sauce, to add a little kick. Went great with some buttered Dave's bread. Easy to make, and oh so satisfying.
