I'm made these cookies many times and they are fantastic. A few changes I have made: - I used regular vanilla extract but put in 3-4 teaspoons for a stronger vanilla taste - When I don't have shortening, I've used butter and margarine - both came out very good as well - I also followed MommyFromSeattle's tip about leaving the cookies on the baking sheet for 10+ minutes. The cookies were soft and moist for days. Amazing recipes. Easy to play around with ingredients (when experimenting or short on ingredients) without adversely affecting taste. A major plus!
