Aunt Carol's Spinach and Fish Bake

We loved this, well the adults did..kids? Not so much. I did use fresh spinach which I cooked with garlic, olive oil, fresh mushroom and a few cherry tomatoes. I seasoned the fish to our liking and sprinkled some grated parmesan on top of the bread crumbs. Served with fresh lemons for the fish and a wild mushroom rice pilaf on the side. Delish!

Easy Mashed Potato and Roasted Vegetable Enchiladas

Delicious! Made this with homemade mashed potatoes and a taco cheese blend. I also sprinkled taco seasoning over the veggies before roasting and put the carrots in for about 15 mins before adding the other veggies. Will definitely be making this again.

Garlic Roasted Chicken and Potatoes

Just love this recipe, simple and delicious. Usually add some carrots and onions to the potatoes. Be sure to spread the garlic on the chicken after its cooked!

Easy Ice Cream Cake

Love this recipe, so simple but so yummy! We do add some caramel topping to the layers and sometimes some crushed Butterfinger bars. My son loves to bring this to picnics and all the teenagers just devour it!

Marshmallow Fondant

I have always wanted to make and use fondant but until now I had never found a recipe I thought I could handle. I used the fondant to make Snoopy cupcake decorations, this recipe was so quick and easy and really made the cupcake stand out. Thank you so much I can't wait to make a birthday cake!

Easy Sugar Cookies

Louisiana Crawfish Boil

This recipe has become a family camping tradition we started a few years ago, this year we ended up with an extra 4 teenagers who couldn't wait to try crayfish. We make right it on the campfire in a big pot. I do throw in a couple pounds of raw shrimp and use frozen Cajun crayfish the local store sells. A huge hit with everyone, thanks for a fun and fool-proof recipe!

Garlic Parmesan Orzo

The first time I made this I followed the direction and with one bite I was hooked! I did brown the orzo in a little olive oil before cooking it. I just made it again tonight still following the directions but throwing in some sauteed mushrooms, asparagus, scallops and a squeeze of fresh lemon juice. Soooo good! I do not recommend adding the cheese until the end, when I added it with the rest of the ingredients it kinda melted and clumped together.

Camp Cornbread

I love this recipe, sooo good and sooo easy! I made a double batch using 2 boxes Jiffy Cornbread mix, I did add less sugar and used a whole 15 oz can cream corn. I made one batch with jalapenos and one without, the jalapenos added a nice flavor without too much heat. I cooked them in cast iron cornbread pans to go with a big batch of jambalaya, everyone loved them.

Cheesy Ranch Potato Bake

Everyone loved this dish. I halved the recipe I didn't use butter but coated the potatoes in olive oil instead. Roasted them covered for about 30mins then uncovered for another 30mins. I then discovered that someone had been into the shredded cheese and only left me a little so I subbed about 1/2 can cheddar cheese soup. Mixed the soup, ranch dressing and some bacon with the taters then topped with shredded cheddar, bacon and panko breading. Popped back in the oven for a few mins then under the broiler to crisp up the top. Soooo good!

Pesto Shrimp Pasta

Love this recipe! I used a locally made pesto we get at the farmers market, in addition to the asparagus I also added a yellow squash and a red bell pepper for some color. Doubled the recipe and used 1 pound of shrimp and 1 pound scallops. Topped with a squeeze of fresh lemon and some grated Parmesan. Just as good the next day for lunch!
