Busy Night Turkey Taco Soup with Avocado Cream

I followed the general idea of this recipe with a few changes. I used creamed corn, because that's what I had and I used a can of Rotel instead of salsa, again, what I had. And I used chicken. But I thought it was a nice soup. I served it with grilled cheese. I will be sure to keep this in my collection for quick dinners or to use left over chicken. I mad it with beef too, worked great! Thanks for this recipe!!

Olive Chicken II

I am embarrassed to say, I have had this sitting in my RB for over 5 years LOL and finally got around to making it. It was a desperation dinner, but it was very good. All I had was a dozen chicken legs in the freezer so I thought I would give it a try. It was GREAT. We LOVE LOVE LOVE green olives and DD had a great time cutting the olives for this. I only had one Roma tomato and a few grape tomatoes so I used one can (10 oz?) of diced tomatoes, didn't drain and also the fresh ones I had on hand. A LOT of green olives, maybe 30-40, mostly cut in half, and dried Italian seasoning (no bay leaf). Also, I only used 2 large cloves of garlic, next time will go for 4. I didn't have any white wine so I used about half of the tomato can full of chicken broth and a splash of Merlot. I covered and baked for around an hour and the chicken was falling off the bone. I served it over white rice and with English peas. It was a huge hit! Both my 5 & 2y/o ate 2 chicken legs each. Hubby took leftovers to work. This is a keeper for our family for sure!! Mock Champagne

I thought this was a great and easy punch and it made a lot. We ended up with leftovers because we had a small crowd. My husband and I froze half of a 2L of Ginger Ale in ice cube trays and the other half we left in the bottle and froze. Then we cut the bottle away and floated that in the punch. It didn't look as pretty as ring might of, but our round (fluted) cake pan is two parts and we figured the ginger ale would run out. After the frozen giger ale thawed, it turned the punch slushy and made it even better. I will definatley make this again!!

Breaded Pork Chops

Sorry, but this wasn't at all what I expected. The pork chops themselves were great. I added a little more garlic powder to the bread crumbs. I didn't have the chive cream cheese so what I did was chop up on green scallion, one small clove garlic and let it simmer on LOW in the chicken broth and a small (maybe TBS water). Then when the pork chops were done, I mixed in about 3/4 package of cream cheese (all I had left) and some milk. It was very close to what I think the onion cream cheese would have tasted like if I had some. I was going to add a can of mushrooms, but decided after tasting the sauce not to waste them. It was almost like a thick hot ranch dressing. I should have just let it cool back down and spread it on bagels. I put it on the table and gave it a try, but just didn't fit with the pork chops, we threw it out. If we make this again, it will just be the pork chops. The whole family liked those. I am sorry. I wish I could have given it a great review.

Black Bean Pinwheels

I thought this recipe was ok, I don't think I ground the beans up enough, they were a little hard. I added garlic powder to the cheese mixture instead of the onion salt, and just realized I didn't add the sour cream to the mix, but that part of the wraps turned out great (the cream cheese, jack cheese and garlic powder), I will use that as a spread for crackers at a party I am having soon. I might try this recipe again and make sure I get the beans well ground.

Crab Crusted Grouper

WOW...WOW...WOW!! I have NEVER enjoyed cooking fish at home, we are in a small aprtment and I am always so afraid of the lingering smell. There wasn't any lingering smell and the taste was WONDERFUL! I do love gouper (as does my husband and the dinner guest I made this for). I didn't want to buy 2 whole bell peppers for only needed 4 Tbs. so I used a frozen mix that was mainly chopped onion with a little bell pepper, next time I will go for the bell pepper, the little I had in the recipe gave the fish a great flavor. Only other issue I had was my fish was MUCH bigger than the 6 oz called for, so we didn't really have enough crab topping, but it was still DELISIOUS! I can't wait to make this again, VERY easy with BIG results!

Beth's Spicy Oatmeal Raisin Cookies

These were great!! I cut the recipe down to 2 dozen...BIG MISTAKE. They were sooo good, I might have to make them again soon. I didn't have the butter flavored shortening, so I just used all butter. And my 5 y/o DD decided they would be good with carmel filled chocolate chips, boy was she right. Also I didn't have any brown sugar so I used a more natural sugar called Rapadura (2/3 cup) and 1/3 cup white sugar. Also I wasn't sure if I could but I used quick cook oats and they were fine. I can't wait to share this at Bible Study tonight, if there are any left to take. I can't keep my kids out of them. Thanks for the recipe! These are the best oatmeal raisin cookies ever.

French Toast Waffles

Shrimp Scampi Bake

As if I needed to add my 5 stars...this was GREAT!!! I don't know if I used 2 lbs of shrimp or not, they were fresh from my DH 'shrimping' last night. But it was a lot. I only used 1/2 cup butter, and 1TBS mustard, two gloves crushed garlic a good sprinkle of dried parsley and around 1TBS lemon juice. I topped with some bread crumbs and cooked for around 10-12 minutes-broiled the last minute or two. There was plenty of sauce, but probably not if we wanted to put some sauce on pasta or rice (it was fine since I served it with garlic potatoes) My hubby kept raving over this dish! Thanks for this recipe. This is a KEEPER for sure!!!!

The Best Marinade Around

Great recipe!! Thanks! I have used it on tougher cuts of meat and they were great. I will probably never make steaks without this marinade again!! I wanted to add to my review...we almost ALWAYS use this for pork chops and call it "fake steak" it is MUCH cheaper to do than steaks all of the time. We LOVE it!!

Hearty Meatball Soup II

This was great! I didn't have any onion soup mix, so I followed the advise of another review and finely chopped some onion and garlic and sauteed it in a little olive oil. I was using what I had available so I used a couple of chicken bullion cups and ended up using a total of 6 cups water. I only had carrots so that was the only veggies we had and some tomato juice, but just a little. I added dried basil and oregano (about a 1/4 tsp eyeballed it). Hubby loved it! I served it with grilled cheese sandwiches. Thanks for the great recipe!!

Best Chocolate Chip Cookies

I am sure my review will be lost amount the over 3,000 already received, but these were great! My 10 year old daughter was helping and wanted to try making a 'Giant' cookie so we placed the dough into our 10x13(ish) baking stone. They came out great! We did need to rotate the pan about half way though but that is probably from our oven. We cut them into big bars, they were probably close to an inch thick. I am about to make another one exactly the same way! Great recipe!!!!

Chocolate Sauce

As per another review I used the one cup milk option. And 1/2 regular sugar 1/2 powdered (because I ran out of regular) and the cocoa powder. We had this over vanilla ice-cream and it was GREAT!! My daughter can't wait for the colder weather so we can use this as a base for hot chocolate with some warm milk!! Thanks for the SUPER quick recipe!!

I wanted to share that we had something similar to this in TX a few years ago at a friend's rehersal dinner in a VERRRYYY fancy/expensive restaurant, adn I think they might have used blue cheese for this...none the less it is a great recipe! I did however opt for a reg balsalmic vinergarett

Yummy Cheese Ball

This was delisious!! I made it for our Christmas party and it was a big success. I didn't form into a ball, just served it from a bowl, and didn't do the nuts since one guest had a nut allergy. But WILL BE MAKING THIS AGAIN! THANKS!
