Waffles I

Reviewed: Mar. 31, 2013
This was great! I doubled the recipe. The only thing I did differently was I separated the egg yolks and whites and beat the whites and folded them into the batter. Yes it was an extra step and another dirty bowl but my family loved them! So I would say it was worth the extra work. The waffles were super fluffy, slightly crunchy on the outside but soft inside. This one is a keeper!!!

Best Chocolate Chip Cookies

Reviewed: Dec. 11, 2011
I am sure my review will be lost amount the over 3,000 already received, but these were great! My 10 year old daughter was helping and wanted to try making a 'Giant' cookie so we placed the dough into our 10x13(ish) baking stone. They came out great! We did need to rotate the pan about half way though but that is probably from our oven. We cut them into big bars, they were probably close to an inch thick. I am about to make another one exactly the same way! Great recipe!!!!

Egg Roll Wrappers

These are great, I don't have a wok but I do have a crepe pan and I use that. I almost always double this recipe. Love them, mine do come out a little thick but no one complains.

Never Fail Pie Crust II

Reviewed: Feb. 8, 2010
This was great and super fast! I made it in the food processor. Didn't quite have 4 cups of flour but used what I had. Used butter (don't usually have shortening on hand) and not sure I used the whole 2 cups of that either...just cut up some butter and threw it in (we buy our butter in bulk so its not pre-marked/measured). And I did roll it out since I was using it for the top of my chicken pot pie. If I had tried I am pretty sure I could have gotten 2 crusts from it, but was in a hurry so i just rolled it out and threw it on the top. It was a super quick and yummy tasting recipe!!

Broccoli Salad

OH GOOD GRAVY!!! I love this recipe!! I had some cauliflower in the fridge that I wanted to us and some bacon left over from breakfast. So this was a perfect addition to our hamburgers tonight. Only made the 2 serving recipe because my kids won't eat it, but I could eat an triple recipe!!! It's that GOOD!!!! I did omit the onion, just didn't feel like adding it tonight.

Hearty Meatball Soup II

Reviewed: Dec. 26, 2009
This was great! I didn't have any onion soup mix, so I followed the advise of another review and finely chopped some onion and garlic and sauteed it in a little olive oil. I was using what I had available so I used a couple of chicken bullion cups and ended up using a total of 6 cups water. I only had carrots so that was the only veggies we had and some tomato juice, but just a little. I added dried basil and oregano (about a 1/4 tsp eyeballed it). Hubby loved it! I served it with grilled cheese sandwiches. Thanks for the great recipe!!

Cinnamon Cookies I

Reviewed: Dec. 10, 2009
These are YUMMY! The kids and I just made them for daughter's Christmas concert tonight. Followed directions up to refrigerate and roll. We were in sort of a hurry so we just formed balls patted them down a little and smooched on red and green sprinkles. LOL They were super easy!! Will be making to give away. And we got exactly 24 probably because we didn't roll them thin and cut.

Baked French Fries I

Reviewed: Sep. 29, 2009
These were really great! We live overseas and frozen fries are pretty expensive. These obviously took more time than frozen but well worth the effort! I followed the directions for the most part but not sure how much oil I actually used. They didn't seem like they were getting crispy enough so I just poured on more oil. They didn't get terribly crispy (like fast food fries) but they were great! They did get kind of soggy once they were out of the oven so make sure everyone is ready to eat when you pull them out of the oven.

Chocolate Sauce

Reviewed: Sep. 24, 2009
As per another review I used the one cup milk option. And 1/2 regular sugar 1/2 powdered (because I ran out of regular) and the cocoa powder. We had this over vanilla ice-cream and it was GREAT!! My daughter can't wait for the colder weather so we can use this as a base for hot chocolate with some warm milk!! Thanks for the SUPER quick recipe!!

Pumpkin Wheat Honey Muffins

Reviewed: Nov. 9, 2008
These are great. My almost 4 y/o son and I just made them. I didn't have brown sugar so we subbed white and molasses (which I had on hand for some reason). We used half butter and half applesauce for the oil and a little more than a cup of pumpkin puree. We also used cinnamon/sugar that I had for cinnamon toast (I was out of just cinnamon) and ginger and nutmeg. I just dumped some in, no idea how much. Made 1/2 with raisins, 1/2 without and got about 15 muffins. The kids are begging me for more and my hubby said "OH MAN" when he tasted one right out the oven. These are a keeper!! Next time we might add chocolate chips and one batch we will add a little oatmeal. Thanks for the recipe!!

Cuban Beef Stew

Reviewed: Aug. 30, 2008
I personally thought this was on the best meals I have ever made. By hubby of 13 years didn't think it was the best ever but he did enjoy it!LOL I made just a few changes because of what I had on hand. I subbed just a dry red whine, and balsamic vinegar, dried Italian seasoning and no bay leaf, yellow bell pepper and no capers. No potatoes, so I served it over yellow rice. I almost left out the raisins but decided to put them in. IT WAS AMAZING!!! The 4 year old I was babysitting asked for 3rds! There really wasn't any left over. Will be making again for sure!! Thanks!!!

Olive Chicken II

Reviewed: Jun. 22, 2007
I am embarrassed to say, I have had this sitting in my RB for over 5 years LOL and finally got around to making it. It was a desperation dinner, but it was very good. All I had was a dozen chicken legs in the freezer so I thought I would give it a try. It was GREAT. We LOVE LOVE LOVE green olives and DD had a great time cutting the olives for this. I only had one Roma tomato and a few grape tomatoes so I used one can (10 oz?) of diced tomatoes, didn't drain and also the fresh ones I had on hand. A LOT of green olives, maybe 30-40, mostly cut in half, and dried Italian seasoning (no bay leaf). Also, I only used 2 large cloves of garlic, next time will go for 4. I didn't have any white wine so I used about half of the tomato can full of chicken broth and a splash of Merlot. I covered and baked for around an hour and the chicken was falling off the bone. I served it over white rice and with English peas. It was a huge hit! Both my 5 & 2y/o ate 2 chicken legs each. Hubby took leftovers to work. This is a keeper for our family for sure!! Thanks for sharing!

Apple Pumpkin Muffins

Reviewed: Jun. 8, 2007
FABULOUS!! I made these for hubby to grab to take to work. He and the kids loved them. I was looking for something to do with some left over canned pumpkin from another recipe. These hit the spot. Only change I made was the topping. I messed up on the amounts when I first made it, so I tried to fix it and use it on some, and they turned out ok. But on some, I put a sugar milk glaze right as they came out of the oven and they were great! The kids liked them both. Thanks for the great recipe, this is a keeper!!!

Breaded Pork Chops

Reviewed: Jun. 8, 2007
Sorry, but this wasn't at all what I expected. The pork chops themselves were great. I added a little more garlic powder to the bread crumbs. I didn't have the chive cream cheese so what I did was chop up on green scallion, one small clove garlic and let it simmer on LOW in the chicken broth and a small (maybe TBS water). Then when the pork chops were done, I mixed in about 3/4 package of cream cheese (all I had left) and some milk. It was very close to what I think the onion cream cheese would have tasted like if I had some. I was going to add a can of mushrooms, but decided after tasting the sauce not to waste them. It was almost like a thick hot ranch dressing. I should have just let it cool back down and spread it on bagels. I put it on the table and gave it a try, but just didn't fit with the pork chops, we threw it out. If we make this again, it will just be the pork chops. The whole family liked those. I am sorry. I wish I could have given it a great review.

Cheese and Broccoli Chicken Soup

Reviewed: Jun. 7, 2007
THIS WAS GREAT!!!! I didn't follow the recipe exactly, but pretty close. I only had frozen broccoli so I waited until the very end and put it in the pot about 10 minutes or so. I added a lot of cheese. Mine did come out a little thin at first, but as it sat in the fridge over the next day or so, it thickened almost seemed like a chowder. I actually ate it the next morning for breakfast, it was THAT good! LOL Hubby loved it too, he kept raving about it! Thanks for the great recipe!

Amish Yumazuti

Reviewed: May 3, 2007
We had this about 2 weeks ago, and it was great! My hubby couldn't say enough. I didn't have stewed tomatoes, so I just used petite diced and mixed it with cream of chicken soup. Not sure how much cheese I actually used, but it was a lot and it was good!!! Thanks for this comfort food meal!!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Apr. 25, 2007
These were great!! I cut the recipe down to 2 dozen...BIG MISTAKE. They were sooo good, I might have to make them again soon. I didn't have the butter flavored shortening, so I just used all butter. And my 5 y/o DD decided they would be good with carmel filled chocolate chips, boy was she right. Also I didn't have any brown sugar so I used a more natural sugar called Rapadura (2/3 cup) and 1/3 cup white sugar. Also I wasn't sure if I could but I used quick cook oats and they were fine. I can't wait to share this at Bible Study tonight, if there are any left to take. I can't keep my kids out of them. Thanks for the recipe! These are the best oatmeal raisin cookies ever.

Heavenly Halibut

Reviewed: Feb. 28, 2007
This was delish!! I used red snapper, cause that is what DH caught. And I didn't have any green onion, so I used garlic. And also, since my fillets were thin, I coated them and baked them for about 20-30 minutes. My PICKY 2 year old couldn't get enough of this. He and Daddy were fighting over the last piece. LOL. Will make it again for sure!!
