Delicious Egg Salad for Sandwiches

Egg-cellent!!!! I added a few things like celery, fresh dill, red onion, and topped the toasted sandwich bread with heirloom tomato slices and red leaf lettuce. It was so scrumptious! A great alternative for dinner during Lent.

My Best Clam Chowder

CLAMAZING! Super easy and totally delicious! I tweaked it a bit for calorie sake - used a pint of half and half instead of a quart and used half butter and half margarine. I upped the ante and made sourdough bread bowls and blew my husbands mind! Perfect accompaniment to a cold Chicago Winter night. This is getting added to the regular rotation. Yum - YUm - YUM!

Pumpernickel Rye Bread

"RYElly" not a rye/pumpernickel bread. Don't get me wrong - homemade fresh bread right out of the oven is soooo yummy and such a treat it's hard to see the negative. However, after going through the motions of making this bread - measuring, tempering, rising and resting and rising and baking - then slicing a nice hunk off a fresh loaf with a pat of butter - I fully expected to taste rye/pumperknickel...and I didn't. It was good, but not flavorful. My husband said it best, "something is missing." I responded with, "YA, the rye/pumpernickel taste! Hello" Anyhoo - I won't be making this recipe again - I'll be on the look out for a higher rated rye/pumpernickel.

Slow Cooker Buffalo Chicken Sandwiches

Easy, easy, easy, easy, easy, easy, easy, easy, and yummy! Literally you throw 4 chicken breasts, a packet of ranch dressing, and a bottle of hot sauce in a crock pot and walk away - 6 hours later you've got a fabulish dinner! Chicken wasn't dry or too spicy (you can control that depending on the hot sauce you use) and I have leftovers. This is going in the dinner rotation from now on. Even a buffoon can do this Buffalo recipe! Love, love, love!!!!!

Slow Cooker Chicken Cordon Bleu

This "Bleu" my taste buds away!!! So good and I loved that it was easy to make. I made it on a night that had a bit of chill in the air, so it was the perfect comfort food - warmed the belly and make the mouth happy!!! This is going in the dinner rotation for sure.

Blue Cheese Beef Tenderloin

Unbe"beef"able - super delicious! I took a risk and made this for a dinner party without trying it out first. The results were fantastic - it also helped that the hubby cooked it a perfect medium rare. The sauce was a fabulous complement to the tenderloin. Love - Love - Love - yum- yum -yum.

Slow Cooker Pineapple Pork Roast

EASY - BREEZY - YUMMYFUL! Seriously took me 2 minutes to prepare and 7 hours later I had a mouth full of YUM! Fabulous flavors - pairs great with brown rice - did I mention it was insanely easy and quick to prepare? This one is being added to the normal dinner rotation.

Beef Barley Vegetable Soup

There was "Barley" any left once I dished out portions. So good - I took others advice and added all the ingredients to the pot at once and cooked it for 10 hours. Tasted delicious and doubling the barley was a smart move. Yum, yum, yum!

Baked Coconut Shrimp

Cuckoo for Coconut Shrimp! Love the healthy alternative of it being baked and not fried like it's traditionally prepared. I added more cayenne pepper only cuz the hubby and I love spice. Delish and super easy to make.

Slow Cooker Chile Verde

Verde, verde GOOD!! Flavors were fabulous - as per the suggestions I added some cumin. The pork did come out a little dry - maybe I won't cook on high, and just low for 8 hours. Will make this again though! YUMMMEEEE!

Greek Chicken

The recipe wasn't all Greek to me - in fact it was easy, delicious, and FAB-U-LOUS! I marinated it overnight instead of 8 hour as the recipe suggests and I suspect it came out even better!

Braised Pork Ragu

WOWWEE!!! My mouth was so very happy to keep eating this delectable meal! The flavors were delish and it was relatively easy to make! I added mushrooms to the mix and used fresh herbs - other than that, nothing else needed to be done. I served it over pasta and the hubby had three helpings! Super good - try it, you won't regret it!

David's Yellow Cake

I followed directions to a T and it came out dense, bland, and dry. The 'batter' was like cookie dough. I've never seen such a thick cake 'batter' before. I put some much time and effort into this cake and it was totally NOT worth it. Very disappointed.

Chicken with Chipotle

Soooooss good and so easy! Flavor was unbelievable. I did grill the leg quarters because it's summer time in Chicago and turning on the oven would be too much. The grilled flavor of the chicken with the smokey flavor of the chipotle peppers was a perfect compliment. YMMMMYY!!!

Eve's Chicken Quarters

So I took everyone's notes into consideration with the liquid and I cut that in half. I prepared everything and put it in the oven and headed to the gym with the notion my husband would be home in time to let the chicken out of the oven after 45 minutes - well he stayed late and I came home to this dish still in the oven. It baked for an additional 45 minutes! I thought it would be totally ruined and the rice would be dried and stuck to the bottom of the pan - well actually it wasn't and the chicken was only slightly dried out. The dish was actually really good! I'll definitely make it again - maybe keep it in 20-25 minutes longer.

Cheesy Chicken Meatballs

I didn't expect this to be so spicy! I'm not a wimp about spice - but I when I do meatballs, I prefer them more Italian style with less kick. But don't get me wrong they were very good and an incredible healthier option. I only used one egg per everyone's instructions and it worked out well. I wouldn't bake them in the oven at that high heat for that long again - they dried out a bit. I will add fresh garlic next time. Overall I got good reviews from my Dad and husband, so I will make them again with a few tweaks.
