Best Ever Slow Cooker Italian Beef Roast

This recipe is incredibly easy to make. Due to other reviews about too much salt, I omitted the broth (used water instead) and salt. Since I was using this recipe for french dip sandwiches, when it was done cooking, I sliced the meat (used eye of round roast) very thin, put on french rolls, place provolone cheese on it, and broiled the sandwiches for a minute or two and used the juice for dipping. Next time if I plan to use it for sandwiches again, I would omit the onion and reduce the amount of dry dressing mix because the au jus tasted a bit like gravy which is what it is intended for if you eat it like a regular roast. For sandwiches I would tweak, for regular roast, I would do it the same way again.

Corn and Black Bean Salad

This is a good basic recipe that can be eaten as is, which is very tasty or can be altered by adding additional ingredients if you happened to have more on hand. I added green pepper and some red onion since I wanted to add more color and nutrition. Since Balsamic vinegar can be a little strong for my tastes, I only used 1/2 what the recipe called for. I followed the rest of the recipe as written. It marinated in my fridge only for a few hours before I used it inside my chicken and cheese quesadillas that I was making. I am sure it would be good as a side, but I really liked it as a filler to my quesadillas. Ate the rest for lunch the next day!

Chicken Quesadillas

This is such a good basic recipe. I boiled my chicken breasts in water seasoned with garlic powder, salt & pepper for 1/2 hour. I then pulled the chicken apart and lightly seasoned it with store bought taco seasoning. I made the quesadillas to suit my family members tastes: my picky 9 year old had just the chicken and cheese as this recipe calls for, but for the rest of us, I added green pepper and the corn and black bean salad from my recipe box from allrecipes.com This is such a flexible and yummy dish that can be altered without too much trouble for each family member. I had the left overs for lunch the next day!

Alysia's Basic Meat Lasagna

My family loves this recipe. For the meat ingredient, I used 1 pound of dark ground turkey mixed with 2 sweet Italian sausage links. (about 3/4#) I cooked my noodles for about 5-6 minutes and I used only one jar of spaghetti sauce. I know others used more sauce but maybe because I cooked my noodles, it didn't require more sauce. Love this recipe!

Chocolate Chip Banana Muffins

I followed the directions exactly with the exception of using 1c white flour and 3/4c whole wheat flour. I made 12 regular sized muffins for 22 minutes and 12 mini muffins for 15 minutes. Turned out great; I will make these again when I have some over ripe bananas to use up. Easy and yummy!

Classic Goulash

I followed the recipe exactly for the slow cooker version noted at the bottom, with the exception of using bay leaves since I did not have any. It was SO easy and tastey. We dished it out, sprinkled cheese on it, and ate it with some fresh bread. My husband added hot sauce to his bowl to give it a kick, but I did not add that or a green pepper as some reviews suggested since I have kids who like more basic flavors. Both the kids and hubby liked the flavor and I plan on moving this dish into our regualr rotation of meals.

Baked Lemon Chicken with Mushroom Sauce

The good thing about this recipe is that is can work for adults and kids. I seasoned the chicken with Mrs. Dash and a little bit of garlic powder and proceeded to follow the recipe as called for. The good thing was I left off the mushroom sauce for my picky 8 year old and the lemon chicken by itself was tender and flavorful for her. (She ate every bite of her chicken breast) The rest of us added the sauce on top of our chicken and were able to enjoy a more complex dish. I will make this again.

Company Chicken Casserole

I made this as the recipe instructed. The flavor was good, but the casserole was so rich due to all the butter and cream of chicken and mushroom soups. I would recommend only serving small portions to guests served with a large fresh salad to counter the casserole. I will probably not make this again due to the fat content and the richness.

Award Winning Soft Chocolate Chip Cookies

These cookies are definately soft and chewy. I added extra vanilla due to the reviews, but I think next time I will just put in the amount that the recipe calls for since the cookies left a strong vanilla aftertaste due to the combination of extra vanilla plus the vanilla pudding mix. Good recipe as is!

Fantastic Black Bean Chili

This recipe was super easy. I did, however, take some suggestions from other reviewers and doubled the amount of crushed tomatoes (2 cans of 14.5 oz), used only 2 cans of black beans, and used 1 1/2 pounds of ground white turkey. I left out the basil leaves since I did not have any on hand, but it tasted great. We topped it with cheese and sour cream and, unfortunately, ate it while we watched the Bears lose to the Packers! : )

Chewy Peanut Butter Chocolate Chip Cookies

My family liked loved these cookies. As others recommended, I doubled the amount of peanut butter and used regular chocolate chips since that is what I had on hand. I substituted honey for corn syrup. I also used a 1/8 measuring scoop in order to have smaller, yet uniformally sized cookies. Cooked for 10 minutes. Perfectly chewy and yummy. : )

Easy Shake and Bake Chicken

I am just learning to cook and I found this recipe SUPER easy. My 8 year old helped me and she loved the result too. My 11 year old gave it a "10." I used only half the amount of butter that it called for, doubled the spice amount but kept the flour amount the same, added some garlic powder to the flour, and didn't add sage since I didn't have any on hand. This has been an every week dinner. Tender and juicy EVERY TIME.
