Turkey Brine

This was the best turkey I ever cooked! The white meat was tender and moist, even a couple of days after I cooked it. I will never cook a turkey again without brining it first! Thanks for posting!!!

Broccoli Salad with Margarita Dressing

I really liked this recipe! The dressing was both tart and sweet and the veggies stayed wonderfully crisp. But note that you have to REALLY like cumin to enjoy this salad because the cumin does take over the dressing.

Spring Salad with Fennel and Orange

I made this recipe as a way to use up left over fennel and it has become our favourite salad and everyone who's tasted it has asked for the recipe and asked me to make it again. The combination of fennel and orange, along with the light and refreshing dressing, make it an outstanding choice. Yum!!!

Multigrain Seeded Bread

I was quite disappointed in the final product. While it tasted marvelous, it hardly rose at all. Therefore, I have a small, quite dense loaf that tastes really good. Can't have it all, I guess! I give it 5 stars for taste but onloy 3 for appearance - average of 4.

Pineapple Banana Bread

Only 3 stars for this one I'm afraid. It tasted lovely but even after 75 minutes in the oven it had a mushy centre. It tasted good enough that I'll try halving the recipe and making some muffins. Sigh.

Braised Balsamic Chicken

This one's a keeper! Following the advice of other users I added some brown sugar to the sauce and the dish was fabulous. I made the whole sauce recipe for two very large chicken breasts and the extra sauce sure didn't go to waste as we put it over rice. I'll be proud to make this recipe for company. Yum yum!!!

Plum Bread

Unfortunately, I won't be making this again. I followed the reviews of cooks who used fresh plums and ran them through the blender, used 1.5 cups of blended plums, cut the oil to 1/2 cup, and baked it as directed. While the flavour was nice, the texture was quite soggy....sigh. I was so hopeful!!!

Tommy's Ham Casserole

This casserole was great! I read the reviews and, following the lead of others, I added my Holy Trinity (onions, mushrooms and celery) along with garlic and some dry mustard. Even my husband, who doesn't like casseroles, declared this one a keeper (I changed the pasta from macaroni to penne because he likes it better).

Zucchini Chocolate Orange Cake

This just didn't cut it for hubby and me. We are zucchini cake fans and none of the flavours in this one seemed to work together. In fact, there wasn't really any flavour that stood out! Also, it was overly moist and even with the non-stick pan greased and floured it stuck a bit. The glaze was bland too. Sorry, won't be making this one again.
