Curried Coconut Chicken

Delicious!! I didn't have any tomato sauce so used only the canned, diced tomatoes (drained). After reading the reviews, I only added 2T sugar. And I added 2 potatoes and a carrot (cut into big chunks) prior to adding the coconut milk. After tasting it, it needed more sugar, so I kept on adding sugar until it tasted "right." It ended up to be 6T sugar, double what the recipe calls for! (And I don't typically like sweet food) So I looked at the coconut milk, and it was unsweetened, with less than 1 g of sugar. Maybe this was the reason why it needed extra sugar? This tastes pretty close to our local Thai restaurant's "Curry Chicken." I'm glad that I didn't add the tomato sauce, b/c it tasted perfect without it.

Scallop Scampi

This was really good. The only thing I'd change next time is adding the parmesan cheese. It made the sauce lumpy. Next time, I'll just sprinkle parmesan at the very end.

Charline's Sweet Potato Casserole

This was a hit at my Thanksgiving dinner... everyone absolutely loved it. I left out the coconut flakes b/c I'm not a big fan of coconuts. Also omitted the corn flakes... just topped the casserole with pecans/brown sugar/butter mixture - it was delicious.

Asian Flank Steak

This was really good. I only had time to marinate it for 5 hours, but the meat was still tender and flavorful. I also ran out of cornstarch so substituted flour, and the sauce turned out fine. It has kind of a "sweet and sour" taste that you'd find in a Chinese restaurant. I served it with steamed rice, grilled veggies, and an Asian salad - a very good main dish!

Crab Rangoon III

I was a little hesitant about trying out this recipe b/c of the mixed reviews, but with some tweeking, it turned out really good! I added some finely chopped green onions and used only half of ONE can crab meat for a stronger cream-cheese taste. Some people also commented that the filling was too mushy and fell apart in the oil. You can avoid this by squeezing out all the water in the crabmeat before adding to the cream cheese mixture (also results in less crabby taste). And when you moisten the wonton wrapper edges with water, you get a tight seal. None of mine fell apart in the oil... I tried various different folds and liked the triangular fold the best. This is pretty darn close to restaurant-quality!

Award Winning Soft Chocolate Chip Cookies

I originally was going to halve this recipe but decided at the last minute to make the entire batch. So glad I did, b/c they were being eaten up as they were coming out of the oven! I thought 6 dozen was way too much, but it turns out that it's not enough! LOVE this recipe - the instant vanilla pudding mix is the awesome secret ingredient!! Thanks for a GREAT recipe that my family will enjoy for years to come!

Award Winning Chili

My husband, who's a big chili-lover, loves this recipe. It tastes great over rice, noodles, inside a bread-bowl, and by itself! I added cheddar cheese, extra cilantro, and raw chopped white onions on the top. It makes for great presentation and makes it taste even better.

Roasted Vegetables

Excellent recipe! I found that it works better if you cook the vegetables in different batches. First, start with onions, bell peppers (I used red, orange, yellow peppers. Looked really pretty), potatoes, and sweet potatoes. After about 25 minutes, I added zucchini and asparagas. This way, the latter vegetables don't get overcooked. You can add other vegetables too, just make sure you time them so that they all get cooked perfectly. The sweet potatoes are great in this recipe!

Creamy Pesto Shrimp

Chocolate Bar Fondue

This was SOOOO good! After reading the reviews, I made some modifications. Used Ghiradelli milk chocolate chips and omitted the water. Instead of using instant coffee powder, I just added a little bit of strong vanilla coffee from the pot, and it was really good! It's great without the coffee too. We dipped strawberries, bananas, graham crackers, marshmallows, pound cake, and cheesecake. YUMMY!!

Pretty good but not the best. You'll be disappointed if you're looking for snickerdoodle cookies like Paradise Bakery's. This one's flatter, harder, and doesn't have that texture.
