Crab Rangoon III

I was a little hesitant about trying out this recipe b/c of the mixed reviews, but with some tweeking, it turned out really good! I added some finely chopped green onions and used only half of ONE can crab meat for a stronger cream-cheese taste. Some people also commented that the filling was too mushy and fell apart in the oil. You can avoid this by squeezing out all the water in the crabmeat before adding to the cream cheese mixture (also results in less crabby taste). And when you moisten the wonton wrapper edges with water, you get a tight seal. None of mine fell apart in the oil... I tried various different folds and liked the triangular fold the best. This is pretty darn close to restaurant-quality!

Warm and Spicy Autumn Punch

Despite the fact that it looks impressive, I really didn't care for this b/c (1) pineapple juice is too overpowering (2) as it sits in the crockpot, all the spices and stuff settle down on the bottom and don't look too appetizing. I much prefer a hot apple cider over this; it just has a weird taste. None of my guests went back for seconds and at the end of the night, I ended up throwing it down the garbage disposal. Definitely won't make this again... not worth the trouble.

Shrimp and Avocado Salad

Green Salad with Cranberry Vinaigrette

I was disappointed - this was a very mediocre salad. Cranberries made the dressing a little too tart and bitter. There are far too many better salad recipes out there...don't waste your time with this one. (unless you make major modifications to the original recipe)

Chocolate Bar Fondue

This was SOOOO good! After reading the reviews, I made some modifications. Used Ghiradelli milk chocolate chips and omitted the water. Instead of using instant coffee powder, I just added a little bit of strong vanilla coffee from the pot, and it was really good! It's great without the coffee too. We dipped strawberries, bananas, graham crackers, marshmallows, pound cake, and cheesecake. YUMMY!!

Asian Flank Steak

This was really good. I only had time to marinate it for 5 hours, but the meat was still tender and flavorful. I also ran out of cornstarch so substituted flour, and the sauce turned out fine. It has kind of a "sweet and sour" taste that you'd find in a Chinese restaurant. I served it with steamed rice, grilled veggies, and an Asian salad - a very good main dish!

Lemon Ginger Shrimp

Creamy Pesto Shrimp

Mrs. Sigg's Snickerdoodles

Pretty good but not the best. You'll be disappointed if you're looking for snickerdoodle cookies like Paradise Bakery's. This one's flatter, harder, and doesn't have that texture.

Charline's Sweet Potato Casserole

This was a hit at my Thanksgiving dinner... everyone absolutely loved it. I left out the coconut flakes b/c I'm not a big fan of coconuts. Also omitted the corn flakes... just topped the casserole with pecans/brown sugar/butter mixture - it was delicious.

Kabob Marinade

This wasn't my favorite, a little too sour for my taste. Next time I'd definitely reduce the lemon juice. I marinated chicken breasts and tiger prawns. The prawns turned out too salty - not the best marinade for shrimp.

Baingan Bharta (Eggplant Curry)

Baingan Bharta is my favorite dish at our local Indian restaurant so I was excited about making this at home. However, this didn't taste anything like the restaurant dish. One taste and it went down our garbage disposal. Biggest problem was that the yogurt made it really sour... Maybe if you use the authentic Indian yogurt and curry it may work out better.

Roasted Vegetables

Excellent recipe! I found that it works better if you cook the vegetables in different batches. First, start with onions, bell peppers (I used red, orange, yellow peppers. Looked really pretty), potatoes, and sweet potatoes. After about 25 minutes, I added zucchini and asparagas. This way, the latter vegetables don't get overcooked. You can add other vegetables too, just make sure you time them so that they all get cooked perfectly. The sweet potatoes are great in this recipe!

Chocolate Trifle

I took other reviewers' advise and modified the original recipe, using vanilla flavored cool whip, chocolate chunk brownies, and whipping up heavy whipping cream instead of cool whip to lessen the sweetness. What a disappointment - it wasn't nearly as good as what people said. WAY too sweet. The brownies were hard, I think if I were to make it again, I would use regular brownies instead of the chocolate chunk ones, the chocolate pieces were rock hard. Maybe my mistake was modifing the original recipe, I may try again, this time following the recipe to a tee. There are far better desserts out there.

Hollandaise Sauce

This is WAY too buttery for my taste. It's more like a butter sauce and the color is butter yellow, not light cream like a true hollandaise. My husband liked it though, probably b/c he LOVES butter. If you're looking for a great hollandaise sauce, look elsewhere!
