Delicious!! I didn't have any tomato sauce so used only the canned, diced tomatoes (drained). After reading the reviews, I only added 2T sugar. And I added 2 potatoes and a carrot (cut into big chunks) prior to adding the coconut milk. After tasting it, it needed more sugar, so I kept on adding sugar until it tasted "right." It ended up to be 6T sugar, double what the recipe calls for! (And I don't typically like sweet food) So I looked at the coconut milk, and it was unsweetened, with less than 1 g of sugar. Maybe this was the reason why it needed extra sugar? This tastes pretty close to our local Thai restaurant's "Curry Chicken." I'm glad that I didn't add the tomato sauce, b/c it tasted perfect without it.
