Asian-American Slaw With Peanuts and Jalapenos

This is very good, though I found it to be a bit too salty even using low sodium soy sauce. Next time I'll omit the regular salt. Also, I would just comment that I believe the lime juice is essential. I originally substituted unsweetened orange juice since I was out of limes but it just seemed to be missing something. So I sent hubby to the store and was amazed at the difference two tablespoons of juice could make. Thank you prisci for adding great new salad to my arsenal.

Kale and Feta Salad

I have been trying to incorporate more dark, leafy greens into my diet but have been fighting with kale's toughness and bitterness. I had no idea that a two minute salt massage could make such a HUGE difference. THANK YOU, THANK YOU, Leslie for this fabulous recipe and especially for the priceless tip tucked inside!

My search for a homemade snack cracker has ended! These are delicious, very easy to make (although a bit time-consuming) and can be customized to your tastes by replacing (or adding to) the sesame seeds whatever spices you like--this time I used Kosher salt, garlic pepper, and red pepper flakes. I would suggest only preparing one egg white at a time to use for brushing on before baking as I found one to be more than enough for me. A second would have just been wasted. Also don't be tempted to remove them from the oven too soon. Browner = crisper.

Orzo and Wild Rice Salad

What a fantastic, colorful, delicious, HEALTHFUL recipe! And the possibilities for creativity using this as a base are endless. For example, I didn't have orzo pasta so used brown rice; substituted dried cranberries for the currants; added some diced tomatoes, a bit of chopped broccoli and some sliced black olives; and eliminated the canola oil entirely. My finicky dauthers-in-law had seconds and asked for the recipe! My husband asked me to make it again to take along camping. This is a 10 star recipe in my family!

Honey Mustard Dressing I

With a few minor changes, this has become our all-time favorite dressing/dipping sauce. I use low fat mayo and only 1 tablespoon of reduced sodium soy sauce. Also by varying the type of mustard (regular prepared, Dijon, spicy brown, etc.) each batch tastes slightly different--we like Dijon best. Very simple and absolutely delicious!

Southwestern Chicken Pitas with Chipotle Sauce

An easy, healthy, AND tasty recipe. I'm a garlic lover so added a couple cloves to the onion/red pepper saute. Also, I didn't have any pitas on hand so made tortilla wraps instead. Finally, for all you wild game lovers out there, I substituted pheasant for the chicken. Delicious!
