Maple Salmon

Chicken Flautas

These are absolutely amazing! The filling was just fantastic. Here is what I did aside from the basic recipe: I roasted the chicken breasts in the oven brushed with a little bit of olive oil and sprinkled with salt, pepper, and taco seasoning. To shred meat, I put the still hot chicken into my stand mixer and used the paddle attachment (so easy and quick!). To the shredded chicken mixture I also added diced green onion and some diced jalapenos which I had presoaked in ice water to draw out some of the heat. I also omitted cheddar cheese...nothing beats plain old Monterrey Jack on Mexican food! I used quite a bit more oil to soften the tortillas then the recipe calls for. I baked the flautas at 350 for about 30 minutes and they were perfectly crisp! I served with Mexican style rice, refried beans, and guacomole salad, just like at my fav Mexican restaurant and let me tell you what...everyone in my family LOVED it! I'll definitely put this in the regular dinner rotation! Thanks for the amazing recipe!

Roast Sticky Chicken-Rotisserie Style

This is definitely my favorite recipe for roast chicken! I have made it 3 times now and every time it has come out moist and perfect! It only took about 3 1/2 hours for mine to be cooked through...definitely watch it and make sure to not over cook it. The seasoning is perfect! I have tried it with and without white pepper and it was delicious either way. Also I did what another reviewer said and rolled a couple pats of butter in the seasoning and put them under the skin on the breasts...sooooo yummy!

Better Than Best Fried Chicken

WOW! This was delicious! The cream of chicken soup really helps with the flavor. Ok I did make a couple of adjustments as far as seasoning goes that make it even better than it already is. To your flour mixture add 1 packet of Good Seasons Italian dressing mix and 2 T tomato boullion...this will give you a very robust, flavorful chicken! I will definitely be making it like this from now on!

Sam's Famous Carrot Cake

I made this for Easter 2012 and got RAVE reviews! Everyone said it was the absolute best carrot cake they had ever had. I omitted the walnuts and the coconut. I also swapped applesauce for the oil. You couldn't even taste the pineapple, but it made the cake incredibly moist, and the raisins were delicious in it. I used the Cream Cheese Frosting II from this site and the entire cake was nearly gone by the end of the day. I made it the night before and kept it in the fridge over night. Thank you for sharing this wonderful recipe!

Simple Scones

I made the Cranberry-Orange variation and they were fantastic! I just threw all of the ingredients into the food processor and saved myself a LOT of time. The dough turned out perfect and the scones tasted amazing!

Glazed Apple Cookies

These cookies have an excellent flavor! I used regular 2% milk for the glaze and it turned out great. I grated the apples like other reviewers suggested, but next time I'm going to dice them...I didn't think these was quite enough apple flavor. I'll probably also add a little more apple. All in all delicious and i will definitely be making them again!

Tiny Pecan Tarts

WARNING!!! These are extremely addictive! I seriously could not stop eating them when I made them for Thanksgiving and neither could the rest of my family. Definitely one of my favorite recipes! I only make half of the filling...it is more than enough.

Cake Balls

Wow, I wasn't sure how these were going to turn out, but W-O-W!!!! I did strawberry cake and frosting with chocolate coating and they were very delicious and refreshing! Can't wait to try different combinations!

These are absolutely amazing! I use 1/2 cup whole wheat flour and 1/2 cup all-purpose and I also replace 1 of the eggs with 1 tbsp flax seed + 3 tbsp water.

Country White Bread

This is delicious! I used 2 cups of whole wheat flour in place of some of the all-purpose. Also, after the bread was done cooking and while it was still hot I glazed it with honey butter...YUM!!!

Boilermaker Tailgate Chili

Made this for my dad's 50th B-day party and it was a HUGE hit! I doubled the recipe and there was none left over. Couple things...I didn't use spicy chili beans, only regular. I used Rotel tomatoes in place of 2 of the cans of diced. I used jalapenos instead of chili peppers and red pepper flakes instead of Tabasco. This can be a very versitile recipe. I will DEFINITELY use again!

Mouse's Macaroni and Cheese

Delicious, Mouse!!! My whole family LOVED it and they normally don't like homemade mac & cheese. I made this exactly like the recipe said. I couldn't find a block of American cheese so I used 8 oz worth of the sliced American cheese and it worked just fine =) I'll definitely be making this again!
