The Best Cheeseball

Absolutley addicting! Love it served with Triscuits or tortilla chips. I skip the garlic salt and use garlic powder instead. I have made it with and without the cilantro and like it better with.

Daddy's Fried Corn and Onions

Yum and OH SO EASY!!!! Had some leftover corn on the cob that we cooked on the grill yesterday. Cut the corn from the cob and added to an onion that I had carmelized in butter with salt, pepper and garlic powder-heated just till the corn got warm and WHAM! Yummo

PERFECT!!! I used applesauce for the oil. Other than that I followed the recipe exactly and it was fantastic - very moist. Could use more cinnamon and a little bit of nutmeg, maybe.

Truck-Stop Buttermilk Pancakes

Very yummy - the recipe made a bunch (I scaled down to 4 servings and it made a ton) so I froze leftovers in ziploc bags. They were great reheated as well. My son says they are better than any he has ever had

Jack's Chocolate Chip Cookies

Very chewy and rich. I made some changes though, used 1/2 cup butter and 1/2 cup applesauce instead of 1 cup butter and I cooked mine as bar cookies in a 9x13 pan. baked at 350 for 40 minutes. Delish!

Dilly Chicken Sandwiches

Delish & super simple. I used lime juice instead of lemon, fresh dill instead of dried, and added red pepper flakes for heat in the dill/cream cheese spread. Yummmmmmm

Apple Bread

Tuna Noodle Casserole

Delish! My boyfriend ate half himself- I added a can of peas and changed the mayo to 1/4 cup with 1/4 cup of sour cream. I also added an additional cup of cheddar and topped with french fried onions. I don't like tuna from a can heated (too fishy), but my b/f said it was the best he has ever had. Will make again.

Cherry Tomato Salad

Delicious! I didn't use the pine nuts (forgot to get them at the store), used grape tomatoes sliced in half and made it the night before. I worried that the tomatoes would fall apart but they stayed firm and the flavors blended wonderfully! The dressing is so light and so refreshing. Also, I bought a can of sliced black olives and used whole small green olives. It was a breeze to throw together!

Southern Living magazine's Breakfast Casserole

VERY YUMMY! I had this for Fathers Day brunch & 4 of us ate 3/4 of it & I ate the rest of it for lunch 2 days in a row. Easy to prepare & a cinch to pop in the oven the next morning - all you have to do is prepare whatever else you are having while it cooks. I served it with fruit salad & english muffins. My stepmom wanted the recipie because my dad loved it so much.

Lazy Katie's Taco Salad

Great recipie. I made it during the week on one of those nights when you feel like ordering out instead of cooking & it was great! EASY to make & a HUGE hit with my 3 year old son. He gobbled up a whole plateful. I added sour cream after serving & my son liked his with ranch dressing.
