BREAKSTONE'S Chicken and Sour Cream Enchiladas

Reviewed: Apr. 12, 2011
This was GREAT! Because I don't like salsa, I just completely cut it from the recipe and it turned out delicious. I stuffed my enchiladas pretty full and only ended up with 5 but that was plenty for 2 people. A side of guacamole along with the lettuce and tomatoes and it was awesome!

Mushroom Blue Cheese Turkey Burgers

Reviewed: May 9, 2011
Well, it turns out I don't like blue cheese. It completely ruined the burger for me. If you've never tried blue cheese before, I suggest you do before you make this recipe. I mixed it with the meat and still could taste it in every bite. Aside from that, I thought it was bland. The chopped mushrooms was what cought my eye with this recipe (I love mushrooms) but you couldn't really taste them that much. Everybody could tell it was a turkey burger too. I will not be making this again, not even without the blue cheese.

Summer Cucumber Salad

Reviewed: May 9, 2011
The recipe was good but I thought it needed something more. I added a pinch of salt but it still tasted like it needed more. I think I might try adding vinegar next time like some other reviews suggest.

Mushroom Omelet

Reviewed: May 11, 2011
This was definately something different for breakfast. Simple and satisfying. I used a lot more mushrooms than the recipe calls for. I don't think the suggested 1/2 cup would be enough, especially if you're a mushroom-lover like me.

Orzo with Parmesan and Basil

Reviewed: May 16, 2011
Yummy! Very simple to make and a nice change from potatoes on the side. I added a dash of garlic powder towards the end. I also used parsley instead of basil because it went better with the fish I was cooking. This recipe definately has room to be customized to any dish you are cooking. Update: lost some of it's flavor when reheated the next day for lunch.

Best Cream Of Broccoli Soup

Reviewed: Jun. 2, 2011
This soup was amazing! I took a little bit of everybody's advice as far as processing the soup. I used a blender on the onion, celery, a third of the broccoli, and about half the broth. I mashed another third of the broccoli with a potato masher, threw that in along with the remaining broth. And left the last third of the broccoli in chunks. Turned out fantastic. I sprinkled a little parmesan on top before serving and made a turkey sandwich on french bread to go with it. Simple and DELICIOUS!!

Yummy! The white wine definately gave it an extra something. Love all the extra sauce, perfect on a bed of noodles.

Cherry Tomatoes Filled with Goat Cheese

Reviewed: Jun. 27, 2011
I'm not too crazy about goat cheese so I decided to just use Chive and Onion Cream Cheese. They turned out great!! Everyone loved them. I'll have to agree with everyone on how hard it is to scoop these out and stuff them. A dinner knife worked the best for me as far as stuffing but it's still really hard to make it a pretty appetizer. They were a hit though.

Grilled Chicken Cordon Bleu Sandwiches

Reviewed: Jul. 28, 2011
Nice twist on a meal that otherwise takes a long time to prepare. Very easy and quick to make. I used Carving Board prepackaged deli chicken. Also made a side of broccoli soup and was full beyond belief after I was done with dinner.

Creamy Mushroom-Garlic Chicken

Reviewed: Aug. 2, 2011
Easy and delicious recipe. Great just the way it is. I throw in a little bit of pepper and fresh garlic. I also double the soup/milk because it goes great as a gravy over mashed potatoes. Definately a keeper.

Roasted Garlic Cauliflower

Reviewed: Aug. 2, 2011
Wow! This recipe is awesome! I've never had cauliflower prepared this way and it blew me away. I'm definately keeping this one. I think fresh parsley is pretty important and I used and extra two tablespoons of olive oil when coating the cauliflower.

Chicken and Mushroom Chowder

Reviewed: Aug. 10, 2011
Great comfort food. I make some minor adjustments. I substitute the water with more chicken broth and only use 1 teaspoons of oregano. I also throw in whatever I have handy: garlic powder, onion powder, poultry seasoning, parsely flakes, etc. And since the chicken is already cooked, I don't put it in until the very end. Awesome on a cold evening.

Bratwurst, Potato and Cabbage Soup

Reviewed: Aug. 24, 2011
I don't know if I did something wrong but this just did not turn out five-star at all, which really surprised me from the reviews. I tried to follow the recipe exactly. After the first 20 minutes of simmering the potatoes, I added the cabbage and realized my potatoes are going to be mushy by the time the cabbage cooks all the way (which made the soup more like a very thick stew). Half way through simmering the cabbage, I realized it's not cooking fast enough and there was not enough liquid. I threw in about a half cup of chicken broth and still had to simmer the cabbage for about 30 minutes overall (by that time I had no potatoes left in my soup at all). I bought fresh Swiss cheese from a deli in a block and cut it up into small chunks but even after simmering for an additional 10 minutes trying to melt the cheese, it did not dissolve (perhaps shredded would of worked better). Then in the end, the soup was very tasteless (although it smelt really really good). I added salt and pepper which made it a little better but it was still VERY bland. I think in the end, the recipe is missing some sort of spice that will take it to the next level and I think the cooking instructions need to be altered.

Grilled Salmon I

Reviewed: Sep. 2, 2011
Awesome simple/basic recipe for grilled salmon! Very flavorfull but not overpowering. The glaze made the salmon a little crispy on the outside and perfect on the inside. I don't think this would turn out as good if it was baked/broiled. I also don't think this would be as good with frozen salmon. Get fresh and grill it and you won't be disappointed!

Mushrooms with a Soy Sauce Glaze

Reviewed: Sep. 2, 2011
Very good side dish. I doubled the recipe and had no problems at all. Since I don't eat steak, I had it with grilled salmon and they went together great. I usually just cook mushrooms in butter with onions so this was a very nice change. I think I'll add a little bit more soy sauce next time. I would also recommend using freshly minced garlic (I didn't and I could definately taste the difference). The only reason I gave it four stars though it b/c they weren't "Wow!". But very good though!

Lacked in the flavor department. I think I should of doubled the sauce or something. They were very plain. I will not try for a second batch though.
