Vegetarian Black Bean Enchiladas

These were great! I made my own refried beans using dried black beans and other ingredients and made my own whole wheat flour tortillas (recipes from another site). I left out the avocado, and forgot to use the tomatoes and sour cream. They were so filling and full of flavor. I love how much fresh vegetables are in this recipe. It's a bit time consuming, but it was worth it. Next time I might make more to freeze for later.

Spinach Basil Pesto

Fruity Fun Skewers

Great idea for parties. I used a different fruit variation...pineapple, strawberries, grapes, and watermelon. Went great with strawberry fruit dip!

Tangy Slow Cooker Pork Roast

Very yummy! I decreased the amount of sugar in half and doubled the spices just for personal preference. With these changes it was very flavorful. Although next time I won't double the salt. And I like that it was so easy to prepare. I had no problem throwing it all together before leaving for work in the morning.

Blackened Salmon Fillets

Holy Moly this is spicy!!!! I loved the blend of spices, but might scale them back a bit next time. I also didn't use the butter...I pan fried with a little olive oil.

Banana Oat Muffins

These were good. To give them a little more flavor, the next time I made these I added some cinnamon, netmeg, and cloves. I also used 1/2 white flour, 1/2 wheat flour, 1/2 white sugar, 1/2 brown sugar, and substituted most of the oil with applesauce. I made several batches of these for my daughters snack day at school and the kids loved them.

Old-Fashioned Lemonade

Loved this! Kids had a lot of fun watching me make it. I did use less sugar. I thought 3/4 cup sugar was plenty sweet. Tasted just like the lemonade mix from the store, but with much better health benefits.

Delicious Ham and Potato Soup

My family loved this. I added a half cup of shredded sharp chedder cheese and a little bit of minced garlic. I might add a little more garlic next time and less salt and pepper.

Cinnamon Stove Top Granola

Yummy. Whole family loved it...even my husband who normally doesn't like "healthy" stuff. I used raisins instead of almonds and cherries because that's what I had on hand. We liked it the best when we ate it as a cereal with milk.

Mom's Applesauce Pancakes

Loved these. I used the pancake mix where you just add water because it was all i had. I added milk instead of the water, added 1 egg instead of 2, and omited the lemon juice. I used cinnamon applesace and added added some apples I had diced up. It was awesome! Kids and I loved it.

Honey Nut Granola

Good recipe. The kids and I liked it. A nice break from the other granolas I have made that are a lot more time consuming. I substituted walnuts for the sunflower seeds and decreased the amount of nuts by a little bit so that I could also add 1/4 cup flax seed and 1/4 cup wheat germ. Will make again!
