Hummus III

I never liked hummus, but I'd figure I'd try it because homemade food always tastes better. I've made it several times now. I've found that I like it better warm and with Stacy's Pita Chips. I used only 2 Tbsp tahini and added an extra clove of garlic. I also tried adding a little finely chopped red pepper and that was good too.

Orange, Honey and Soy Chicken

Really good. I used fresh garlic and ginger because I wasn't sure where to find paste. I did use less ginger to suit our tastes. Served over rice. I liked that there was extra sauce to pour over the rice.

Baked Vegetables I

Really good. I made this as a side dish, so we had a lot of leftovers. I put foil over mine to make it cook faster. I also used homemade onion soup mix. The store only had 2 zucchini left, so I substituted the other 2 with yellow squash.

Borboletas

I made this for my daughter's school lunch and my husband who works outside and does not have access to a microwave. Really nice alternative to a cold sandwich. We all liked it. The only thing I may change next time is to use less pasta or use more dressing. I only used a 12 oz box of bow tie's but left all other ingredients the same. But I thought that the pasta was still a bit dry. However, this may be because we did not eat it right away and it absorbed some of the dressing.

Amazing Whole Wheat Pizza Crust

Very good. We prefer two thin crusts. It even freezes well. I make the dough ahead of time and leave it in the refrigerator to thaw in the morning and it is ready by the time I make dinner.

Butternut Squash Soup

I thought this tasted pretty good before I added the cream cheese...and I used only 1 package of it. The cream cheese was still overpowering. I baked the squash first for 40 min. and then scooped it out. I might try again without the cream cheese.

Taco Seasoning I

Love the recipe. The only thing I will change next time is a lot less salt. I guess i'm used to buying the low sodium seasoning packets, but the salt was very overpowering to me. Going to make again tonight!

Addictive Sweet Potato Burritos

I was a litte leary to try this because I've never tried this ingredient combination before. But with all the good reviews, I decided to give it a go. For some reason, I ended up having a lot of beans leftover. The beans looked as though they had too much water and I had a hard time putting very much on the tortilla. Good flavor though. The sweet potato overpowered the beans (maybe because I did not use all the beans). Maybe next time I will add less water and/or mix the potatoes in with the beans so that the flavor is more evened out. Very filling, healthy, and inexpensive!

Italian Grilled Cheese Sandwiches

I really liked these. We didn't use the marinera sauce, but I'm sure they would be even better. My kids love grilled cheese, so it was nice to do something different with it. Will make agin.

White Chocolate Covered Pretzels

Loved these! They were quick and easy. I did have a hard time working with the chocolate as it hardened up quickly. And you have to be careful not to have the heat on too high. I had to dip the pretzels as soon as it started to melt...then work fast. But they were very good. Much better tasting than the pre-made kinds you can buy at the store. My kids had fun putting the sprinkles on.

Fruit, Nut and Cream Cheese Bagel Flats

Well, my 3 year old only wants to eat these bagels now for every meal of the day. lol. My kids love them. I couldn't find the cinnamon bagels, so I used whole wheat bagel thins. We've tried them with bananas, pineapple, and strawberries. I even pack them in my 7 year old's lunch for something different than a sandwich.

Sweet, Sticky and Spicy Chicken

Holy Moly this is good! I did only use 1 tbsp of hot sauce for my kid's sake. And I coated the chicken with flour before cooking as others suggested. Loved the flavor and the chicken was very tender. Will make again.

Lighter Chocolate Chip Pancakes

I was worried at first to try whole wheat pancakes, but these were so good! It tasted like eating a chocolate chip cookie. And the good thing was that we hardly needed to add any sugary syrup on top. I ate mine plain. Kids loved them. And every time I eat them they are so filling. I am barely hungry when it's time to eat lunch. Will be making these often.

Pico de Gallo Chicken Quesadillas

These were really good! I'm not a huge fan of jalepeno, so I may try omiting or decreasing these next time. Best quesadilla recipe I've tried. And very filling. My husband loved them. I couldn't find 12" tortillas, so I used 6" and made 4 quesadillas.

Fluffy French Toast

Very good. Kids loved these. It was a great way to use up some bread I had sitting around. I had to add about 4 servings onto the recipe to get 12 or 13 slices. Will make again.

Easy Vegan Pasta Sauce

This was pretty good. I wasn't sure what kind and size of tomatoes to use and I think I may have used too much. It tasted rather "tomatoey". I added some extra spices and it turned out good.
