About this Cook
I married my wonderful husband on June 26, 2010 and since then have been really working on my cooking! Before that I always loved to cook, but didn't do it steadily. Now, I love to find new recipes to try!
My favorite things to cook
I love converting recipes for the slow cooker. Mexican style food often ends up on our table, since it is so easy to adapt and make adjustments to and we both love spice!
My favorite family cooking traditions
Mom's St. Patrick's Day meal, Yum!! Corned Venison (or beef), colconnen, Irish soda bread, a green veggie, green themed dessert and of course dyed green milk.

Maple-Balsamic Vinaigrette
Didn't really measure anything, just did it to taste and it was fabulous! Used much less olive oil than called for. Served on a salad made from the last greens of the season, dried blueberries and cranberries, sunflower seeds, and an apple from the tree!

Thai Cucumber Salad
Delicious! I would have given a 4.5 if possible. The only reason I gave lower than a 5 is because I changed it quite a bit by adding in radish, onion and used red wine vinegar. I also, unfortunately, didn't use peanuts since I had none in the pantry. Great salad for a summer evening with fresh garden cucumbers!

Slow-Cooker Chicken Tortilla Soup
Just made a really full crock pot of this soup. Used frozen chicken breasts and just threw it all together. Also added black beans. Highly recommend adding lime juice on top.
