American Lasagna

I don't eat meat, so I made this without tasting it. I added some extra sauce and left out the sugar as others suggested. Everyone loved it, so this recipe is a keeper.

This is a little watery, but very nice and fresh tasting. Don’t overblend. Maybe add some whole tomatoes for thicker consistency.

Pasta Primavera Sauce

This is a great sauce. I make it all the time. As a vegetarian, I had trouble finding a recipe for a substancial sauce that really holds up to whole wheat pasta, but this one does. I'd go easy on the herbs, though - add to taste.

Quinoa and Black Beans

Delicious! This was the first quinoa recipe I ever tried. Since then, I've brought it to picnics and it's always a hit because it compliments other dishes well. It's a great vegetarian recipe. The only thing I'd do differently is cut the amount of beans in half, as someone previously suggested.

Chickpea Curry

Delicious - I made it twice this week! I used a little less coriander and cinnamon the second around (2 sticks of crushed cinnamon is VERY strong - one whole stick was sufficient). I also added asafetida, fenugreek and lime juice, which brought out the flavors and definitely enhanced the dish. The cilantro is nice but, if you don't have any on hand, you can still make it - the curry will stand on its own.

Lentil Soup

I found this soup to be very bland. If you're thinking about making it, definitely add a lot of flavor enhancers.

Moroccan Lentil Soup

This was an excellent soup! I used whole cardamom seeds instead of the ground cardamom, which resulted in a very strong flavor and aroma. Perfect for those who love African and Indian spices. I will definitely make this soup again.
