Reviewed: Jan. 24, 2005
ok this is excellent. no matter if it is a posole or not, it is great. i did make a few changes, 1. used 27 oz of pinto beans instead of hominy, 2. used 4 fresh chopped jalapenos instead of green chiles, 3. 1, 10 oz can of green enchilada saucein place of 1 can of chicken broth. made it twice in one week. oh yes, i used 10 chicken tenderloins instead of the breast also .

Sweet Potato Bake

Reviewed: Jan. 19, 2005
I really liked this recipe. I added cinnamon and allspice to it. Next time I will use all brown sugar and more spices. My family really enjoyed it. They thought it was going to be for desert, so when they found out it was a sidedish, they were excited that they got to eat it with their dinner. I served it with baked pork chops 1 from this site.

Mexican Corn

Reviewed: Jan. 19, 2005
Great combination. I could not believe how smooth and creamy it was. The crunch of the frozen corn was a great contrast. I served it with burrito pie from this site. I took the advice of some of the other reviewers, I used a 32 oz bag of frozen white corn, only 3 oz of cream cheese, 4 T of minced fresh jalapenos (seeds and all), but I did add a couple more tbls of butter.

Baked Pork Chops I

This is a great recipe. I thought it was going to be more difficult and time comsuming than it really was. We all loved it. I could cut it with the spatula that I served it with.

Chickeny Chickeny Rice

Reviewed: Jan. 4, 2005
OK, my sister and I are doing the Michael Thurman's 6 week body makeover and this recipe is perfect for it. The only thing I change is the amout of rice and water, 3 1/2 C water and 2 C rice. I also sometimes add a can of veggies to it after it comes out of the oven and lid it again for 5 min letting it sit on the stove off of the heat. This is my 11yr old's new favorite rice (EVEN WITH THE VEGGIES).

Homemade Peanut Butter Cups

Reviewed: Jan. 4, 2005
I made these for New Years Eve 2004. They were (in my husbands own words) awesome. They weren't as pretty as the ones in the store, but they were good.

Sweet Potato Pie II

Reviewed: Nov. 24, 2004
Great. This is a new thanksgiving staple. It is amazing what the egg whites do to this pie. It is like eating a candies sweet potato and the texture is gooey and kind of crispy.

Grandmother's Oatmeal Cookies

Reviewed: Nov. 24, 2004
This is the most amazing oatmeal cookie recipe I have ever made. My husband, father and sister's fiance fight over them. I added a 1/2 bag of butterscotch chips to mine. I chopped the chips up a bit with the mixer that I was using. This gives them a creamier, richer, butterscotchier taste. Excellent! Also, for Thanksgiving, I made the dough ahead of time, froze it, then made them the day ahead. They came out great.

Pico de Gallo Chicken Quesadillas

Reviewed: Oct. 18, 2004
These bad boys are a must make. They were excellent. Everybody loved it. If they weren't so filling, they would have asked for seconds. The pico de gallo was easy and quick. make sure you seed your tomatoes. The hardest thing was to cook the chicken. I served these monsters with Best Spanish Rice which was a nice compliment. Great recipe. Thanx Tony

Turkey Pot Pie

Reviewed: Oct. 18, 2004
If I could I would give this more than 5*. This was the best thing I have ever made. Everyone in my family loved it. It was much easier than I thought it would be to make. I used chopped chicken tenders because no place where I lived had turkey, even still it was WONDERFUL! Update: this time I added broccoli in with the potatoes and used shredded carrots. I now use thyme instead of oregano. I cut way back on the herbs because of my families tastes. I use a tablespoon of parsley and a teaspoon of thyme.

Cheeseburger Pie

Reviewed: Sep. 28, 2004
It was good. Did not have all of the ingredients, but was still good. We used 8oz tomato sauce (no tomatoes), 2 cans of corn (no peas), and just topped with potatoes (no crust). I will make again when I have all of the stuff. Makes a great shepperd's pie this way.

Black Bean and Salsa Soup

Reviewed: Sep. 28, 2004
Great Recipe! Easy, Fast and Filling. Three great reasons to try this recipe. I blended all of the beans, but i did it with an immersion blender. Doing this left it much more brothy, but if you let it cook for longer than necessary, it gets thicker. We ate it like a chili. I poured it over rice, or Homesteader Cornbread which is on this site. This is a very good combonation. Enjoy!

Garlic Chicken

Awesome. My whole family loved it, even my son's friend that hates everything. They call them "Better than Chicken McNuggets, McNuggets". I chopped up chicken tenders, then baked them for about 20 min at 375. Tender, tasty and totally easy...my favorite kind.

Very, very good. My father is very picky about his apple pie, and he really liked this pie. I did not add the raisin because he would not have eaten it.

Applesauce Bars

Amazing! I made my own apple sauce well,(Sarah's Applesauce from this site), not my own, but it was amazing. I took it to a card/game night at a friends house, and it was gone by the time we left.

Sarah's Applesauce

Reviewed: Sep. 16, 2004
Oh my goodness, this was sooo easy and sooo yummy. I used 5 small Gala Apples, boiled them for 20 min, put 1 cup of it in the recipe from this site called Applesauce Bars. The only thing that I can say is amazing; not only by itself, but also when used in a recipe.
