Cinnamon Griddle Cakes

These were great! A pancake that I actually liked. My kids and husband ate the left over batter as waffle sticks the next morning. We made a double batch. If you are feeding boys, I really recommend a double batch. We only had enough for 3 sets of waffles the next day.

Fried Rice Restaurant Style

This is really good and really simple to make. I used 1/2 of a 16oz bag of frozen carrots and peas (I just boiled them as per the peas), a T of Hoisin sauce, a few green onions and 1 extra egg. The sesame oil was a great touch. Very good!

Caramel Apple Pie II

I made this pie for my daddy for father's day. I really did not like the taste of this pie and neither did my father, but everybody else in my family did. They ate the whole thing. I took the advice of another reviewer and halved the sugar in the apples and it did NOTHING for this pie. Next time I will use the correct amount of sugar, half of the flour and twice the cinnamon. I sliced the apple on my v-slicer and they were perfect.

Green Sauce Enchiladas

These enchiladas were spectacular. I for got to add the corn, but they were still wonderful. My husband who confesses to be a "vegetarian" loved these. He always tell me, "I don't like meat in my mexican food", he ate his words tonight. I will make again soon.

This was really good. I used fresh mushrooms and cream of mushroom soup, instead of celery and cream of celery soup. I also used left over chickeny chickeny rice that I had in the fridge.

Perfect Baked Potato

I will never put another potato in the microwave. This was a great, simple recipe. I used Paula Deen's House Seasoning Mix to season them with before I put them in the oven.

Twenty Minute Chicken

This is one of the best chicken dishes I've ever made. Of course, you do need to season most things you cook with salt and pepper. My 11yr old that never eats leftovers loved these. Luckily he shared them with me. My version I cooked the mushrooms, onions and garlic in the pan after I cooked the chicken. Yes it did take me about 5 extra minutes, but as you can tell, well worth it. Thanx CELIADAYAGI.

Pepperoni Bread

i have to admit, i cheated. i used the pilsbury french bread out of a can, unrolled it, added a bit of pizza sauce i had left, and it was great. i did not roll it, i made diaganol slits in the bread and criss-crossed them. great recipe thanks.

Quick and Easy 20-Minute Chicken Posole

ok this is excellent. no matter if it is a posole or not, it is great. i did make a few changes, 1. used 27 oz of pinto beans instead of hominy, 2. used 4 fresh chopped jalapenos instead of green chiles, 3. 1, 10 oz can of green enchilada saucein place of 1 can of chicken broth. made it twice in one week. oh yes, i used 10 chicken tenderloins instead of the breast also .

Sweet Potato Bake

I really liked this recipe. I added cinnamon and allspice to it. Next time I will use all brown sugar and more spices. My family really enjoyed it. They thought it was going to be for desert, so when they found out it was a sidedish, they were excited that they got to eat it with their dinner. I served it with baked pork chops 1 from this site.

Mexican Corn

Great combination. I could not believe how smooth and creamy it was. The crunch of the frozen corn was a great contrast. I served it with burrito pie from this site. I took the advice of some of the other reviewers, I used a 32 oz bag of frozen white corn, only 3 oz of cream cheese, 4 T of minced fresh jalapenos (seeds and all), but I did add a couple more tbls of butter.
