Shrimp Scampi Bake

Awesome! Awesome! Awesome! My 12 yr old son and I made it for dinner together and then the next day for lunch, he made it all by himself. We used easy peel shrimp and it took us no time at all to put together.

Chicken Florentine Casserole

I liked this, but the canned spinach was not my cup of tea. If I make this again, I will use fresh spinach. My family liked it. I cut up the chicken and mixed everything together except for the spinach. I also cooked four thighs and left them whole.

Awesome Chicken and Yellow Rice Casserole

Absolutely Wonderful! I did make the recipe a little more user friendly. I bought a costco rotisserie chicken and softened my veggies on the stovetop, while I shredded my chicken, I made 2 packages of the Mahatma brand yellow rice, then mixed everything together and baked for 20 min. It was all gone. I had my nieces over and my hubby and I did not even get seconds.

Quick and Easy Alfredo Sauce

OMGoodness! This is the best way to make Alfredo. It really is quick and easy. This time I did not have enough butter, so I used 1/2 EVOO. They forgot to add the word yummy to the title. My oldest son does not like cheese sauce, but he loves this. I make mine with chicken or ground turkey.

Apple, Cranberry, and Pear Crisp

OK I went a little crazy with this recipe. I not only made this in a large spring form pan, but I also put it in a pie shell. It was wonderful. My hubby loved it, my kids loved it and I didn't even get to try it. I am making it again, but this time I am adding extra topping. I served it warm for breakfast with whipped cream on top. (shh...I was very naughty)

Orzo with Parmesan and Basil

Spectacular! No fuss, no time, no mess. I made this with Broccoli Chicken. I did not have any basil, so I left it out. I added a teaspoon of pepper and a 1/2 teaspoon of garlic salt with parsley. This is going to be a regular side dish in my home.

Cinnamon Griddle Cakes

These were great! A pancake that I actually liked. My kids and husband ate the left over batter as waffle sticks the next morning. We made a double batch. If you are feeding boys, I really recommend a double batch. We only had enough for 3 sets of waffles the next day.

Fried Rice Restaurant Style

This is really good and really simple to make. I used 1/2 of a 16oz bag of frozen carrots and peas (I just boiled them as per the peas), a T of Hoisin sauce, a few green onions and 1 extra egg. The sesame oil was a great touch. Very good!

Caramel Apple Pie II

I made this pie for my daddy for father's day. I really did not like the taste of this pie and neither did my father, but everybody else in my family did. They ate the whole thing. I took the advice of another reviewer and halved the sugar in the apples and it did NOTHING for this pie. Next time I will use the correct amount of sugar, half of the flour and twice the cinnamon. I sliced the apple on my v-slicer and they were perfect.
