This was just ok. If you add a few touches - i.e. salt and dill, it really enhances it. But as the recipe is written, it doesn't deserve 5 stars.

Gazpacho

I'm giving this 4 stars. It's great for a light summer lunch or dinner. I followed the recipe, but I think when I make this again, I'll use 1/2 of a garlic clove. I felt like there was just a bit too much bite from the raw garlic. Or, I suppose you could take the advice of another reviewer and cook the garlic for a minute prior to adding it. Otherwise, this was a really nice recipe and I'll definitely make it again.

Artichoke Salsa

This salsa is AWESOME! My only regret is that I didn't double the recipe. I'll definitely be making this again. I made this exactly according to the recipe except that I added a squeeze of lemon juice and refrigerated it before serving. If you like artichokes, TRY THIS NOW!

Thai Cucumber Salad

This recipe is AWESOME! If you like the Thai cucumber salad that you can get at most any Thai restaurant - you'll love this one. I add red onions sliced very thin and cut the jalapeno in half. One jalapeno makes it plenty spicy especially if it sits in the fridge for a few hours.

Antipasto Squares

I just made this for a superbowl party that I'm going to shortly. Since I doubled the recipe, I thought I would try it before leaving for the party. This is pretty good. I skipped the ham and just used salami and pepperoni. I also used both provolone and muester cheese and followed the suggestions of others in terms of pre-baking the bottom crust and draining the peppers. I added some garlic powder in the eggs and used pillsbury french bread instead of crescent dinner rolls. My only minor complaint is that I had a hard time with how to serve these. I'm just going to cut the whole pan into a bunch of squares and put a spatula out (it's a superbowl party - it doesn't have to be too fancy). Otherwise, the flavor was really good. Next time, I would use more cheese.

Jalapeno Popper Spread

This dip is great. You definitely have to increase the jalapeños. I used 5 fresh jalapeños and I probably could have used 6-7 given how much heat these lose in baking. I served with pretzel thins and it was great. Will definitely make again.

Breaded Brussels Sprouts

Wow! These were awesome! The only change that I made was that I used a clove of garlic rather than garlic salt. Next time I would cut the Brussel sprouts in half so that they could soak up more of the bread crumb mixture. I will definitely make this again.

Enchilada Pasta Bake

This was awesome! My husband and I both loved it. I added a couple things based on the other reviews. Since some people said it was a bit dry, I added about a quarter cup of cream cheese to the tomato mixture. I also added a can of sliced black olives and some crushed red pepper, and topped off my plate with some avocado. Next time, I'll try it with sour cream and salsa.

Cabbage and Noodles

This was really good. I followed the recipe, but added a half cup of chicken stock when I combined the noodles with the cabbage. I'll definitely make again, but next time I'll add a clove or two of garlic.

Shanghai Noodle Salad

This was insanely good. I didn't have ketchup, but used bloody mary mix and crushed tomato slices. Served over fried tofu, it made an excellent meal that is light and cool for the summer!

Balsamic Chicken with White Beans and Spinach

This was pretty good. I followed the recipe pretty much except I didn't have quite the amount of spinach needed ( this may have made the difference). I tried to offset my shortage of spinach by adding roasted red peppers which added a little bit of flavor, but overall this was a nice change of pace.

Baked Potato Soup

I used 6 potatos because hate ones I had were pretty small, no bacon, 2 extra cloves of garlic and added broccoli since i had it on hand. Awesome! It's baked potato soup- how could you go wrong?

Six Can Chicken Tortilla Soup

This is a good starter recipe, but there is so much you can do with this - add onion, jalapenos, garlic, green chilies, corn tortillas.... Top with cheese, red onion, cilantro, sour cream.... The options are endless. I've made this before and it's a good base recipe.

Black Bean Brownies

These will definitely cure a sweet tooth, but next time I'll try adding some baking powder and coffee. They didn't taste like black beans at all, but the texture was definitely different than normal brownies.

French Onion Soup VIII

I have made this many times with several variations. You can substitute chicken broth for beef or red wine for white. It's also good with whatever type of onion you like. I like this with sweet onions or red onions. I also typically add black pepper and substitute pepper jack cheese.
