Teena's Spicy Pesto Chicken and Pasta

Delicious and just the right amount of heat - I added 1/2 cup of heavy whipping cream to make more of a pesto-cream sauce and it was terrific. I used store-prepared fresh basil pesto and left out the cilantro.

Octoberfest Pork Chops

Gave this 4 stars but only because of the cooking times listed. My chops were dried out and a little tough. However..the marinade is tasty and flavorful, the panko-parmesan breading is outstanding - but the chops should be cooked for less time at a higher temp (ala shake & bake) I think 15-20 min at 425 degrees would produce juicier more tender chops. Plan to use this recipe again with these cooking times.

Tortellini Minestrone

My kids call this 'bellybutton soup' because of the tortellinis... it's really a great soup! Very flavorful. I used mild italian sausage, 1/2 can of tomato soup instead of ketchup, and made my own mixture of italian seasoning (oregano, basil, salt, pepper), and one addtl 14oz can of beef broth - The only ingredient I ommitted was the green pepper. The zucchini adds a nice flavor and texture. Will def. make again!

Buffalo Shrimp

pretty good - breading was a little thin, and sauce was too garlicky with just mincing - I'll really pulverize the cloves next time and maybe only use 3. Spicy & delicious however

Chicken With Mushrooms

This was awful - tasteless & terrible.. I even tried adding fresh garlic, 1/2 cup of white wine, salt, pepper.. nothing helped. Will not make again - not sure how so many people were off on this one..

Pecan Breaded Chicken Breasts

This recipe was delicious! Cook on Medium/Low heat so you don't burn the chicken and I covered the pan for the last 5 minutes so breasts would stay juicy! Is sweet, so needs pairing with something a little spicy for a side dish. My husband loved it, I'll make it again!

Italian Wedding Soup I

I used 7 cups of chicken broth - I also doubled the meat and halved the orzo -- I satueed 1/3 cup of onions and a 1/3 cup of zucchini in a pan w/ chopped garlic and a bit of olive oil and added it to the soup as well, plus 1/3 cup of chopped celery. Delicious!! My husband loved it!
