Kielbasa with Pasta

Since I enjoy and rely on other people's opinion before trying a recipe, I felt compelled to do others the same favor. Tried this recipe for the first time tonight and it is a keeper. My husband is a kielbasa fan so it was definitely a hit with him. I was surprised that no seasonings were necessary. The flavoring comes from the vegetables and smoked sausage. I'm sure any variety of tomatoes could be used.

Satiny Chocolate Glaze

After spending the day being snowed in I decided to make some red velvet cupcakes from scratch. I used for the first time my newly purchased apple corer to fill them with the cream filled recipe of Grace W. from this website and topped it off with this satiny chocolate glaze. I actually think this recipe is better than ganache. I am quite pleased that I was able to turn out a bake shop quality cupcake. Sometimes I even surprise myself!! :)

Cream Filled Cupcakes

Used this filling recipe for my red velvet cupcakes and it was great. Filled a zip lock sandwich bag, cut off the corner tip and it made for a perfect pastry bag. Thanks for sharing Grace.

Oatmeal Raisin Toffee Cookies

I always read the reviews before making a recipe and I agree with everyone, you need to add 1/2 tsp. of salt. The only thing I did differently from the recipe other than the salt was added golden raisins. I believe that this is a very versatile recipe and you could add just about anything and it would still come out delicious. I like using a cookie scoop for uniform shaped cookies.

Chocolate Trifle

I was lucky enough to find a seasonal box of instant "Turtle" jello pudding in my pantry! The carmel/pecan flavor in this choc. pudding gave this recipe a nice variation. The only thing I changed was I added skim milk vs. water. A must for chocolate lovers everywhere!!

Strawberry Spinach Salad I

A wonderful recipe to use when strawberries are in season. I used green onion and 1/3 cup of sugar and instead of all spinach I used a variety of baby spinach, romaine and leaf lettuce. The dressing was very tasty.

Macaroni Egg Salad

Spanish Rice II

This is a very simple and delicious recipe. I used one can of chicken broth and enough water to make two cups. Better if made ahead and reheat in the microwave when serving.

Old Settlers' Baked Beans

I suggest cooking your bacon and onions together or your hamburger and onions but not all three at once. Made with pinto and great northern beans. I only used the brown sugar and added one tbsp. of mollasses like someone else suggested. Leftovers very tasty cold, too!

Banana Crumb Muffins

I used 4 bananas and 1/2 tsp. of banana extract. Some of my bananas were bruised and spoiled badly so I knew I probably didn't have quite enough. I also addeded 1/2 cup chopped walnuts. Wonderful flavor. A definite keeper to make again.

S'more Brownies

My husband loved these and started with dessert first for supper when I made these. So easy with a brownie mix. The next time I may try using milk chocolate chips and bake brownies for 20 min. and only 10 minutes after adding topping. My marshmallows were toasty brown. But hey, isn't that the way a s'more over a campfire is supposed to be. Thanks for the recipe, Liz

Best Bread Pudding with Vanilla Sauce

I followed the advice of another reviewer and substituted 10 toasted hamburger bun halves in place of the bread. What a wonderful way to use them up. I also used half and half in place of the whole milk. This is definitely a keeper.

Cheeseburger Soup I

Cooked potatoes, celery and carrots in the chicken broth. Cooked onions with hamburger. Used fresh parsley and a little cheyenne pepper. Good and hearty cool weather meal. Followed recipe only changing how it was cooked.
