Individual Baked Eggs

Made these today using pre-cooked bacon. Very easy to put together and cook. I added a few herbs to the eggs to try to get some more flavor out of them. I can see where these would be great to make in larger quantities. We made 6 this morning and they came out nicely. Will try them in the future as well.

Sundried Tomato Chicken Sausage Ragu with Roasted Eggplant and Tomato

Made this last night and it really turned out well! I followed the recipe as described - maybe went a little heavy on the zucchini but can you really have too much zucchini? :) This will definitely be made in the future at my house!

Brown Sugar Meatloaf

Really good. Easy to make. One of the few things that the kids rave about - maybe it's all the brown sugar involved? :) The wife and I enjoy it also. I followed the recipe as stated for my first iteration and a few weeks later I substituted 1/2 the crackers w/ bread crumbs. Couldn't tell much difference. Both variations were great!

Sweet and Tangy Sauteed Collard Greens

Tried this recipe for New Year's day meal today. I usually cook my collard greens in a pressure cooker but the thought of doing something different appealed to me today so I gave it a shot. Like some of the other reviewers, I modified the recipe slightly. I added in 2 cloves of garlic to the onion saute, and also added in about 1/2 tsp of grated fresh ginger. Other than that, I followed pretty closely. I cooked these in a large electric wok which provided easy heat control, and I went about 10 mins or so after adding in the water at approx 350f on the temp controller. I was a bit reluctant to add the sauce because I thought it may be overpowering, but it turned out really well. My wife (who doesn't normally care much for collards) liked it also and thought it was more like a salad dish than a collard dish. I definitely left the greens just a TINY BIT al dente because I didn't want that fully soft texture that you get when you boil collards. That's why I usually use a pressure cooker and these ended up with a very similar texture. Will definitely be trying this recipe again soon!

Sean's Mommy's Roasted Root Vegetables

Gave this a try tonight - following the recipe loosely. Added an extra parsnip or two, and an onion and a little garlic. This was easy to put together, other than cutting up the root veggies which is always a challenge for me. It turned out really well. I think next time I may try to add some balsamic as suggested by another reviewer, but overall I was happy with the results. I ended up going about 55 mins using convection roast. Probably could have done another 15 mins because not all of the edges were as browned as I like, but again, this gets into the area of personal preference. I may try this for a potluck sometime. I think that people will be surprised just how good a wide mixture of winter vegetables can taste! Thx for the recipe.

Roasted Sweet Potatoes & Onions

Made this tonight for the first time but DEFINITELY not the last! Was very good, even though we forgot to add the sliced almonds at the end. Very sweet taste. I think the sliced almonds would bring out the amaretto even more. All around great way to prepare sweet potatoes!

Zesty Slow Cooker Chicken Barbecue

Very easy to prepare. Like some of the other reviewers, I was concerned about the amount of liquid left over, but once I shredded the chicken, it turned out just right! I backed this down to 3 serving, and I also served it with white rice since my wife was not in the mood for a sandwich. It turned out really well. Easy to prepare, quick cleanup, and great taste! I'll definitely be making this one again on those days that we run short on time.
