Delicious Ham and Potato Soup

This was delicious and super easy to make. I made it exactly as the recipe called for and it was fast and flavourful. Next time, I will replace the celery with leeks and maybe even the ham with bacon (just as a personal preference). Definitely gets 5 stars from me.

Curried Chicken and Brown Rice Casserole

Peppermint Ammonia Cookies

Having married into a Mennonite family... I have already tried two other recipes for these cookies. This is by far the easiest one, and in my opinion has the best texture of the three recipes. I'm giving this recipe 5 stars, although I made MINOR changes just based on personal preference: (1) I reduced the baking ammonia to 1 tbsp (2) I increased the peppermint oil to 3/4 tsp. (3) Use parchment paper instead of greasing the sheets. (4) Because my oven runs warm, and these aren't nearly as good if even slightly overbaked, I baked them at 350 degrees for 11 minutes. Tips: these should ideally only have a light brown bottom, and very little or no brown around the edges, or they will be overbaked. Also, the BEST way to eat these is out of the freezer. The fluffy texture and coolness from the freezer, in combination with the peppermint flavour is amazing.

Amazing Pork Tenderloin in the Slow Cooker

Becel® Holiday Butternut Squash with Apple and Cranberries

This was a huge hit this Thanksgiving. Even my picky toddler and pickier husband enjoyed it. I doubled the spices and must admit I used butter instead of margarine, as I didn't have margarine on hand.

Chewy Brownies

Excellent! I halved the salt as others suggested, and did not make the glaze (as I like brownies without icing). These were so delicious! Perfectly cakey and fudgy at the same time and the crunchy edges were yummy too. To top it off, this was one of the easiest brownie recipes ever. This recipe is definitely a keeper!

Butter Chickpea Curry

I made this using cauliflower as suggested, also added corn and about 50% more of each spice. I thought it was really good at first, but near middle-end I was tired of the same flavor. Definitely good but I think it might be better as a side dish.
