I love seitan, it's so versatile! I've made a lot of it and this recipe is wonderful, albeit more complicated than it really needs to be. I made it as I usually make it (dry ingredients mixed in one bowl, wet in another, then mix together and knead until it starts to act a bit rubbery, a couple minutes tops). I also didn't feel like fooling with cooking an onion and waiting on oil to cool so I used onion powder. I added 2 tsp of Liquid Smoke and 3 tblsp of Bragg's Liquid Aminos to the wet ingredients. They're fabulous! I'm eating one on a sandwich right now and will definitely be making them again soon!
