Pumpkin Chocolate Chip Cookies I

Very comforting cookies! I did follow the suggestion to use butter instead of shortening. Also, i used half white sugar and half brown sugar and added a 1/2 tsp ground ginger. They were delicious. These cookies are great for kids because of the soft, cakey texture. They are a lunch box favourite in the fall.

Apple Crisp II

Add Cereal!! I didn't think it was possible to make this Apple Crisp recipe any better, but...I didn't have oats at home, so I grabbed a box of cereal out of the pantry - Honey Bunches of Oats - and mixed that into the topping mixture. It was SO good. The flakes and clusters of oats from the cereal are much crunchier and crisp than the plain old oats. I'm going to make that a permanent addition to this recipe.

Easy Meatloaf

Delicious. My husband made this and added his own twist by grinding up mushroom (about a cup and half) in the food processor) and adding those to the mixture. Tasted great and the kids had no idea there were mushrooms in the meatloaf.

Crispy Fried Chicken

Great recipe! My family loved it. One change I made was to place the chicken in the oven and bake instead of frying. I placed the chicken on greased baking sheets and used oil cooking spray to lightly spray the chicken on top, before putting it in the oven. It turned out very crispy.

Lemon Coconut Squares

I made these for the first time over this Christmas. I picked this recipe because it was easy and the reviews looked great. I was not disappointed. This was one of the most popular treats I baked this Christmas. People kept asking for the recipe and each time I baked a tray of these lemon squares, there were NO leftovers.

Janet's Rich Banana Bread

This recipe was great! Definitely the most moist banana bread I have ever had. I substituted 1/2 cup brown sugar and 1/2 cup white sugar. Also, I didn't have any sour cream on hand, but used greek style vanilla yogurt instead of the sour cream. I also read the other reviews and did add 1 tsp baking powder. The bread turned out beautifully - great texture and wonderful flavour. The kids loved it and I will definitely be making this recipe again. Thanks!
