About this Cook
I'm a business professional who loves to try recipes at home when I can find the time. I enjoy cooking and learning more and more techniques to get better. A lot changed recently when I was diagnosed with stage 4 stomach cancer and haven't been able to eat for more than four months. despite not eating, I'm still learning and using some down time to cook new items for family.
My favorite things to cook
Just about anything if it sounds good. But I have to admit that I'm afraid to bake or work with dough.
My favorite family cooking traditions
With my mother born and raised in Germany, I'm a big fan of schnitzel and spaetzle.
My cooking triumphs
I make a mean coriander crusted pork loin, stuffed with apricots and pine nuts.
My cooking tragedies
I invited a friend to dinner in my tiny NYC apartment for stuffed Cornish hens. I forgot to cover them with foil and juices, fat splattered all over my oven and smoked terribly. We had to open all the windows even though it was the middle of winter. Despite needing gas masks and blankets the hens tasted quite good!

Thai Curry Soup
This recipe was oh so good! The flavor of the broth was excellent and everyone at the table enjoyed it thoroughly. Next round I will reduce the spinach and increase the amount of shrimp and mushrooms, but the broth is perfect as is. Great meal!

The simple flavors of this dish really stand out with great ingredients. I loved it with just a couple tweaks. I splurged a little on ingredients and used pancetta instead of bacon slices and pecorino romano instead of parmesan. I also added about 1/2 a cup of grated romano to the sauce and allowed it to melt in right before tossing in the pasta. Also for the first time, I went to an italian deli to get imported tomatoes. I never really thought there would be a big difference in flavor, but I was wrong. If you can get them, I highly recommend it.

Chicken Tikka Masala
Very good and close to my local favorite place. I followed others suggestions and reduced the salt and pepper. I also used garam masala and added extra cardamom. Overall, everyone was very satisfied!
