Hot Water Cornbread

I loved that I could serve my daughter with an egg allergy cornbread but it came out too crispy for our taste. Maybe I cooked it too long but otherwise not too bad with some pinto beans.

Gel's Green Beans and Beef

This dish was a hit. My cousin ate with us and he said it was really good. I did modified the dish just a little, I used frozen green beans because that's all I had, I also added some saute' onions and I added more of the honey and soy sauce to make more of a gravy but otherwise the flavors were on point. Not too sweet or too spicy.

Chocolate Chip Cheese Ball

I tried this recipe over the Christmas holidays and I could not get it form a ball too mushy. I even tried to place it in the freezer but nothing helped. Not sure what I could have done wrong. So I had to make do with what I had. I decided to layer the chocolate chip cheese with crushed graham crackers. Like a lasagna. I added too much graham cracker (my fault) and it over power the chocolate chip cheese. Although the chocolate chip cheese was tasty I could not form the ball. More than likely I will not make this recipe again.

Szechwan Shrimp

I doubled the sauce as others suggested and I also added scallops otherwise, I followed the recipe exactly as written. It was not too spicy and DELICIOUS. I also cooked some vegetable fried rice which balanced the dish. I would definitely cook this again but I might have to cook a separate pot just for my 5 year old who doesn't like spicy food. Thanks for your suggestions

House Fried Rice

This recipe was real easy and fast to make (especially if you cut everything up front). I didn't measure anything and I added mushrooms and used frozen peas & carrots. I didn't use the shrimp or ham (only because I didn't have them) but the day before we grilled jerk chicken so I diced that up. I cooked everything in one pan and I did cook the garlic with the onions in the sesame oil. Even my picky child loved it. I will definitely make this again.
