I am so sorry I didn't get a picture. This turned out beautiful. I used red, yellow, orange and green peppers for added color. My meat-eating-man ate two of these and asked for it to become a regular meatless Monday meal. I did use fresh herbs as opposed to dried and I added a little bit of Worcestershire to the tom sauce. This is a great make ahead meal. I made it Sunday and refrigerated until Monday. This is a fabulous recipe!

Pan Fried Eggplant with Saffron Mayonnaise

I made this for an afternoon snack and both of my boys ate them up ! I followed it exactly. Next time I am going to cut my eggplant "french fry" style. That zippy saffron mayo was a huge hit and has been requested for ham sandwiches. Thank you for the share.

Pepperoncini Beef

The only thing we did different was use jarred minced garlic. I left instructions for the man to do this while I was gone. This is officially our favorite easy peasy dinner! My boys went guano over this. It was a three pound roast. There are three of us. There is none left.

Kale and Quinoa Salad

I've made this three times. Loved it more each time. I have found for my house (boys) I put the fruit and cheese on the side and let them add those to their liking. Definately message the dressing into the oil. I have a 12 year old boy (carnivore) that will eat this by the big bowlfulls. I always make twice the recipe. Also, any good nut/fruit will do. We are fond of walnuts and craisins.

Asian Cucumber Salad

This has become a staple in my house! I have tried variations of this dressing for cabbage and it is wonderful. I omit the sugar every time and use a pineapple vinegar. Also, red pepper flakes are good instead of chili peppers. Thank you so much for this recipe!

Shrimp with Snow Peas

I was not excited about this recipe as we are spicy food eater but after gum surgery I was told to avoid spicy foods. This has A LOT of flavor! Use fresh dill. I've made this twice. First I followed the recipe as is - excluding the peas - and really liked it. Second time I used Tofu and the tofu version was just as good. This is not a good leftover though. I will be making this again.

Tofu Vindaloo

This is wonderful and simple! I more than doubled the vindaloo (because we are crazy in my house) and I substituted something green (brocolli, fresh beans) in place of the carrots. I've made this several times and it is wonderful. Also try using fresh roma tomato instead of paste - way better.

We love this! I've made it about five times. I support all the same suggestions: marinate overnight and use the marinate to make a drizzle. I never have leftovers and there are only three of us.

Refreshing Spaghetti Squash and Cucumber Salad

This is now a summer must! Things I changed: I sliced the seedless cucumbers into strips for a more uniform look and I used sweet red peppers instead of onions as my boys won't eat raw onions. This is a large recipe and would feed the masses but at my house we ate on this all weekend and it only got better. VERY FRESH AND SUMMERY!
