Chicken Paprikash

This is a great recipe - to add taste to the chicken, I salt the chicken and let it rest for at least an hour before cooking time. Chicken thighs are the best. Also, you can start with the onions, add a little water to them and no butter, cover the pot and cook them for 10-12 minutes. The onions will be translucent and you don't need the oil or butter. I also add a heaping Tablespoon of Penzy's Hungarian Sweet Paprika at this point. Then add the chicken. To give it a kick in flavor, I add a 14 oz can of diced tomatoes and green chilies and some cut up bell or other type of sweet pepper. This will add enough liquid that you won't need to add maybe 1/4 cup water. Once the cooking is done. Serve the Paprikas over the nokedli with a dallop of sour cream instead of putting it into the sauce. It tastes great even without the sour cream and the calories will be less. The nokedli can be made using a spetzel maker. My husband is Hungarian and these are the ways my family have made this dish our tradition.

Microwaved Potatoes Lyonnaise

I used this recipe all the time. I take red potatoes and leave the skin on. Garlic salt to replace the garlic and add parsley. I also double or triple the margarine or butter, whatever I have on hand. And, I leave out the onions, pepper, paprika, and oregano. I guess I use this recipe for the base, but it turns out wonderful every time. Sometimes I use it for breakfast and mix it in with a little scrambled eggs and cheese. Yum

Fresh Semolina and Egg Pasta

I made this today using my kitchen aid mixer. It came out excellent. The machine kneaded it for approximately 5 minutes until the dough formed sort of a ball. Then I let it rest. I cut it into 3rds. Rolled it out until it was thin enough to get into the pasta machine. It looked dry and a bit crumbly but it was perfect. I think next time I will halve the recipe. We had more than enough noodles for everyone.

Kettle Corn

Yum, Yum Yum and easy too! I tested 3 kernels. When they popped I added the sugar and kernels. I did the 3 second rule...shake for 3 seconds and cook for 3 seconds. Didn't burn and tastes sooooo good. I will use this again for an easy snack.

Plantation-Style Vanilla Lemonade

I have a vita-mix, so I tried the recipe as is and it was too bitter. So I made another batch, with 4 lemons pealed, sugar, and vanilla. Blended this and then added the water and replaced most of the water with ice. Yum! 5 stars with my adjustments.
