Warm and Spicy Autumn Punch

Reviewed: Nov. 28, 2014
How have I not reviewed this yet? I have made this punch for the past 10 years- it's in my Thanksgiving Recipes folder. Everyone loves it! I double everything, and it fills my big crock pot to the top. I start this punch early in the morning in the crock pot, and by 10 am my whole house smells wonderful! I like to throw in about a half cup of fresh cranberries- they add a little tartness, and they look pretty floating in there with the oranges. Also, I would recommend using REAL apple cider, the kind they sell in gallon jugs every fall, usually from a local farm. It makes a big difference in my opinion. Great recipe- thanks!

Quinoa Salad with Mint, Almonds and Cranberries

Reviewed: Nov. 28, 2014
This was fantastic. I made this for Thanksgiving, and it got rave reviews. It was a beautiful looking salad just packed with flavors! I made the quinoa the day before assembling the salad and chilled it in the refrigerator overnight. I started with about 8 cups of chopped kale (a big salad bowl full) instead of just 1 cup but left the mint at 1/2 cup, which was plenty of mint. I omitted the celery and carrot- they seemed out of place to me but probably would have been fine in there. I forgot the scallion but didn't miss it. I doubled the dried cranberries and the almonds- I used lightly salted oven roasted almonds and left them whole. I also doubled the lemon juice. Absolutely delicious and stunning on the Thanksgiving table. Thanks! I will use this again and again!

Oatmeal Chocolate Chip Bars

Reviewed: May 12, 2010
Try 1 cup cinnamon chips (Hersheys makes them- they are not red hots, they are just like chocolate chips only cinnamon) and 1 cup chocolate chips, no pecans- heavenly!!! Thanks so much!

Cubanos Frijoles

Reviewed: Jan. 14, 2010
This is so good!! It is now in the meal rotation at my house. I use 1 lb ground turkey and 1 lb ground pork, skip the cilantro, olives and chipotle powder and use apple cider vinegar instead of the red wine. It's awesome- everyone loves it and it is quick and easy other than making the beans (I use dry black beans, not canned). Thanks so much!

Chicken Oreganato

Reviewed: Nov. 16, 2009
I can't believe I haven't reviewed this yet! This is my "go-to" chicken recipe when I have dinner guests. It is so good!! I have used boneless, skinless thighs, bone-in thighs, drumsticks, even leg quarters- it is always a huge hit no matter what part of the chicken I use. I add a little rosemary and garlic powder into the rub. I also pour off some of the oil in the bottom of the pan before I turn the chicken. It gives the chicken such a wonderful chewy texture. Thanks so much for the recipe!!

New England Clam Chowder I

Reviewed: Jan. 13, 2009
This was the best clam chowder I've ever made but was thinner than we like as written. I made a roux with flour and butter to thicken it at the end. It ended up very smooth, creamy and flavorful. I doubled everything and used all the clam juice. I used all whole milk instead of 1/2 and 1/2, still came out wonderful. Thanks!

Fantastic Focaccia Bread

Reviewed: Oct. 20, 2008
I make this all the time. I use 100% freshly ground whole wheat flour, so it's a little more dense than if you use all purpose flour. I also add about a tablespoon of vital wheat gluten. I also addrosemary which makes it smell wonderful while it's baking, and I add a little more salt. This is a family favorite. I serve it whenever I make soups with extra virgin olive oil and black pepper for dipping. Delicious!!

Zucchini Herb Casserole

Reviewed: Jul. 23, 2007
I have been making this a lot and it is awesome as written except I cook the zucchini for a lot longer before adding the tomatoes and rice- like 20 minutes- because we like it to be really soft. We scramble eggs with the leftovers and it's just delicious. Today I modified it and it was so delicious I had to share. I added about a teaspoon of cayenne pepper in addition to the seasonings and substituted salsa for the tomatoes. I had leftover pinto beans and brown rice and used those instead of plain rice. It is SO GOOD. So there's another twist to this incredibly yummy zucchini recipe!! Thanks so much :)

Christmas Ornament Cookies

Reviewed: Dec. 18, 2004
These cookies were incredibly good! We didn't use them as ornaments, just made them to decorate and eat. The first batch didn't even make it to decorating, we just gobbled them up! This dough was the best for cutouts. I chilled it for only a half hour and it was wonderful. I think if you changed the name of the recipe to Christmas Cookie Cutouts you would have a ton of rave reviews- I don't think enough people are finding this gem of a cookie recipe :) Thanks for the new favorite!

I just wanted to re-rate this with another 5 stars this year. I made this so many times last fall, and since it got colder outside my kids started asking for it again :) You've given me a family recipe to pass on- thanks!!! And if you're reading this to see what others said, YES. It's THAT good.

Classic Gingerbread Cutouts

Reviewed: Dec. 16, 2002
Well, I didn't have molasses, allspice OR cloves! But I used this recipe anyway. I used maple syrup instead of the molasses, doubled the cinnamon and crossed my fingers. They turned out really great! Of course, they're not really gingerbread cookies, but they were nice and crunchy and easy for the kids to decorate. I'm sure with the correct ingredients they are wonderful. The dough was just perfect and got easier to work with as I handled it. A keeper! Thanks!

Butternut Squash Soup

This was really good, but so rich! I also thought it should have been a little creamier- mine seemed a bit watery. Anyway, I got a lot of compliments and it looks beautiful!

Parmesan Chicken II

Delicious! It smells so wonderful while it is cooking...we couldn't wait to eat! I sprinkled more parmesan over the top when I was done rolling the chicken, just to be sure it was all covered. A definite keeper.

Cheeseburger Soup I

Reviewed: Dec. 10, 2002
Very good! I used beef broth instead of chicken. Next time I might use more than a 1/2 pound of ground beef. My kids said it's great, but where is the cheeseburger part??

Chicken Noodle Soup

Reviewed: Dec. 5, 2002
Great soup! I used alphabet pasta because my kids were asking for alphabet soup. I also had some very inexpensive chicken legs so I boiled them and then removed the skin and pulled the meat from the bones and used that. Very tasty!
